Today would have been moms 96th birthday. Homemade Blueberry Muffins were a favorite of hers she made often. In her memory I made her blueberry muffin recipe that reminds me of her. Happy Birthday Mom in heaven, I make these every year as a tradition to keep her memory alive in the kitchen.

Double The Recipe



I actually always double this recipe as it will never make enough for my crew eating these.


They will fly off the table. Pass the butter and eat them warm around 5 minutes out of the oven.

Mom's Blueberry Muffins

prep time: 10 minscook time: 25 minstotal time: 35 mins
This was my mom's go to recipe, basic simple ingredients for blueberry muffins

ingredients:

In a large bowl mix:
1/4 cup of sugar
1/4 cup of shortening till resembles coarse looking sugar

Beat in :
1 egg

Add:
1- 3/4 cup cake flour (regular flour will make them heavier) 
3 teaspoons of baking powder
a pinch of salt

Alternate:
1 cup of milk to wet the dry ingredients.
Fold in one cup of fresh blueberries, red raspberries, strawberries or blackberries ( I have even used chopped apples with sugar cinnamon in this recipe

instructions:

Line muffin cup pan with paper liners, fill to 3/4 full. Bake at 350 for 20 minutes.

  11. I love blueberry muffins. These look so pretty. I too love to use the crumble method like a pie. Mom mom always used that method to make muffins. The texture comes out really amazing. So yum.
