Chilled Blueberry Soup Recipe

This is a cold blueberry soup the perfect refreshing meal starter to any summer meal.

The soup is creamy and sweet with a hint of spice to enhance the flavors of the berries plus you can substitute a different pureed fruit with this versatile recipe.

If you're not a spice fan, try adding some grated orange or lemon peel to this soup for a variety of flavors to bring the best taste out in the berries.

The recipe is super easy to make but does require a food processor or blender.

Blueberry Chilled Soup

Blueberry Chilled Soup

A refreshing blueberry chilled soup most often found in fancy restaurants or Cruise ships
Prep time: 10 MinCook time: 10 MinTotal time: 20 Min

Ingredients

  • 1 cup water
  • 1 pint fresh blueberries (Remove the stems, washed, and blot dry)
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
  • a pinch of ginger
  • 2 cups plain, vanilla or blueberry yogurt
  • Optional garnish: fresh mint leaves
  • Note:if you're not a spice fan try grated lemon or orange peel to substitute for the spices

Instructions

  1. In a medium-sized saucepan boil the water.
  2. Add the berries with the sugar and two spices.
  3. Boil for 3 minutes, and stir a few times.
  4. Reduce heat and simmer 10 minutes.
  5. Cool completely.
  6. Place the cooled berries into a food processor and pulse until smooth, then add the yogurt.
  7. Serve this in a bowl chilled for at least 2 or 3 hours in the refrigerator.
