Chicken Parmesan Subs
Here is the classic Chicken Parmesan sub made from scratch or all store-bought ingredients. You choose what's best for your busy lifestyle for quick and easy meals.

Ingredients
- 2 pounds ground chicken
- 1 cup Italian seasoned breadcrumbs
- 1/2 cup freshly grated Parmesan cheese
- 2 large eggs
- 3 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 teaspoon Italian seasoning
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil (for brushing or spraying)
Instructions
- Preheat the oven to 400 degrees.
- Line a large baking sheet with parchment paper or lightly grease it.
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan, eggs, garlic, parsley, Italian seasoning, onion powder, garlic powder, salt, and pepper.
- Mix gently until just combined. Avoid overmixing to keep the patties tender.
- Divide the mixture into 8 equal portions and shape each into a patty about 1/2-inch thick.
- Arrange the patties on the prepared baking sheet, leaving space between each one.
- Lightly brush or spray both sides with olive oil to help them brown.
- Bake flipping once until crispy, between 30 and 35 minutes or until the internal temperature reaches 165 degrees.
- For an extra crispy finish, broil for 1 to 2 minutes, watching carefully to prevent burning.
- Alternative Chicken Ideas:
- Breaded Chicken tenders, Chicken Cutlets, Chicken Patties, Chicken Fingers(you get the idea, any breaded chicken, whatever you like, homemade or frozen cooked) or grilled chicken
- Sub rolls ( or use homemade hoagie rolls, hard rolls, French bread, Italian bread, Ciabatta bread, Homemade bread, or whatever you prefer you have on hand)
- Assembly:
- Place the chicken on a roll.
- Add sliced whole milk mozzarella, non-smoked provolone, Havarti, white cheddar, or whatever else you like
- Top with Homemade marinara sauce or your favorite jarred sauce
- Sprinkle with minced fresh minced garlic or garlic powder, and Pecorino Romano blended with Parmesan grated cheese
- Drizzle with a little olive oil.
- Optional: Sprinkle with dried oregano, basil, parsley, black pepper, or another spice you like for the bread.
- Wrap in foil and bake until cheese melts, or broil for 1 minute.
