Rocky Road No Churn Ice Cream
Rocky Road easy no-churn ice cream, a frozen treat loaded with chocolate, nuts, and marshmallows

Ingredients
- 6 ounces semi-sweet chocolate, chopped coarsely, left chunky
- 1 cup milk
- 1 14-ounce can sweetened condensed milk
- 1 teaspoon pure vanilla extract
- 1 tablespoon unsweetened cocoa powder
- pinch salt
- 3/4 cup miniature marshmallows
- 3/4 cup roasted salted pistachios, toasted pecans or almonds or honey roasted peanuts
- 1/2 cup mini chocolate chips
- 2 cups heavy cream
- 1 cup thick store-bought hot fudge sauce (not syrup)
Instructions
- Heat the milk until it starts to form little bubbles but isn't boiling and add the chopped chocolate.
- This should melt in the warm milk after around 10 minutes (stir to blend evenly).
- Beat the heavy cream to soft peaks then add the chocolate gently folding it into that mixture.
- Add the rocky road rest of the ingredients folding into the heavy cream mixture.
- pour half the mixture into an ice cream container (with a cover).
- Add over the top half the fudge, then more ice cream mixture and the remaining sauce.
- Take a butter knife and swirl the sauce in "S" formation.
- Freeze with a cover for around 8 hours before serving.
