Buffalo Chicken Meatball Bites

These are chicken meatball appetizers with a blue cheese dipping sauce with 3 different cooking methods.
Ingredients
- Chicken Meatballs:
- 2 tablespoons vegetable or canola oil
- 4 tablespoons butter
- 1/3 cup wing sauce/ hot sauce
- 1 pound ground chicken
- 1 egg
- 1 teaspoon granulated garlic powder
- 3/4 cup plain breadcrumbs
- salt, and pepper to taste
- 1/3 cup minced celery, chopped, is optional
- Dipping Sauce:
- 3/4 cup sour cream
- 1/3 cup blue cheese crumbles
- 1/3 cup whole milk or half and half
- 3 tablespoons Hellmann's mayonnaise
- 1 teaspoon granulated garlic powder
- salt and pepper to taste
- dash of cayenne pepper or a dash of hot sauce
- 1 tablespoon white vinegar
- Note: You can also just use a refrigerated brand of blue cheese salad dressing or ranch dressing.
Instructions
- Make the dipping sauce by mixing all the listed ingredients in a bowl, then refrigerate covered until ready to use.
- Mix all the meatball mixture together, and roll them into small mini meatballs.
- Note for all Cooking Methods: Meatballs should read 165 degrees on an instant-read thermometer to be sure they are completely cooked.
- Fry: Heat 2 inches of oil and fry in a heavy-duty cast-iron pan. Fry until slightly browned on both sides, around 4 minutes on each side, on medium-high heat.
- Baked: Line a baking sheet with parchment and preheat the oven to 400 degrees. Baked until golden browned around 20 to 25 minutes.
- Air fry: Preheat the air fryer and oil spray the basket. Air fryer for 11 minutes or until golden and the internal temperature ofthe meatballs is at 165 degrees.
