The soup is made quickly with chicken broth, spice, and fresh ingredients that take just around 25 minutes to prepare.
The sausage and boiling the pasta are what takes the longest everything else will cook quickly.
The tortellini and sausage make a delicious addition to chicken broth and the fresh wilted spinach adds just the right flavors to compliment them both.

Delicious Broth
I have made this soup so many different ways using both loose and Italian hot or mild sausage, leftover chicken or turkey breast cubed.
This soup is very versatile so you can pretty much use whatever you have on hand except for the spinach or other greens you prefer in it.
Sausage is our favorite in this soup because of the spiciness it gives and balances perfectly with the tortellini pasta.
If you start out with any other raw meat, just use the same directions as you would cooking the sausage first.
Either way, the soup will be amazing!
Optional Meat or Vegetable Suggestions
- cubed chicken or turkey freshly cubed and leftover works fine also
- cubed fresh pork
- loose sausage, loose ground pork, or ground beef
- London broil or other beef
- bacon or pancetta
- a combination of loose and cubed meats of choice
- cooked escarole
- kale instead of spinach
- sliced carrots
- fresh peas or green beans can be added
- white canned beans

Tuscan Sausage and Spinach Tortellini Soup

This is a rich tortellini soup made with sausage or another meat you prefer. The soup is done quickly in around 25 minutes and full of Tuscan Italian Style flavors.
Ingredients
- 1 - 1/2 pounds sweet or mild Italian sausage thinly sliced or loose or if you prefer another meat use chicken, turkey, or London broil all cubed
- 2 cups fresh spinach leaves torn or cooked escarole or kale if preferred
- 1 teaspoon garlic powder
- 1 cup water
- 1/4 cup Pinot Grigio wine
- 2 tablespoons fresh minced garlic
- 3 tablespoons freshly chopped parsley
- salt, pepper to taste
- 3 cups chicken broth or more or use water and bouillon ( you can also make
- your own broth if using chicken instead of sausage recipe here
- 2 cups or more of tortellini pasta cooked to package instructions and drained
- 2 tablespoons butter or olive oil
- Garnish:
- Red pepper flakes
- Pecorino Romano grated cheese
- Note: for creamy soups add 1/2 cup heavy cream in place of white wine
Instructions
- In a 4-quart soup pot, saute the sausage over medium heat with butter or olive oil until cooked all the way through and no pink remains.
- Note: if using chicken or other meat, saute the same.
- Add garlic; cook 1 minute longer. S
- Stir in broth, garlic powder, parsley, water, salt, and pepper to taste bring to a boil.
- Reduce heat, simmer, uncovered, for 10 minutes.
- Return to a boil.
- Reduce heat, add spinach, and wine just until the spinach is wilted around 4 to 5 minutes then stir in the tortellini.
- Ladle into bowls.
- Sprinkle with cheese.
- If desired, top with crushed red pepper flakes.
