I know you're saying who has leftover prime rib right? Well, we have so much after the Christmas holiday we love to repurpose it like this recipe in a stir fry.

This stir fry is a wonderful addition to that end piece that may be just a tad overcooked for you!

A whole new meal is created just by adding some of your leftover vegetables or chopping up a few fresh ones you love to create this healthy meal.

While shopping for prime rib I always pick up a bag of mixed julienned vegetables that have shredded cabbage, carrots, broccoli, and snow peas.

I have even used this recipe to make delicious air fried tacos, wraps, there are many ways to serve this filling.

Leftovers can get really boring if you don't come up with some clever ideas, like making my Leftover Prime Rib Pot Pie which is another family favorite!

Easy Holiday Leftover Recipe



Every year we have way too much food leftover and truly blessed, however, we never let anything go to waste ever.



After the second day of maybe making the same thing we need to invent something tasty and this is one of our favorites after those heavy meals.



I threw in a few other vegetables our family likes and viola, stir fry heaven on a plate psst don't tell them it's healthier!



With the addition of some other pantry ingredients, this stir fry is super easy, takes care of the boing leftovers, and turns them into a delicious new meal to serve.

Ingredients You Will Need to Make This Easy Leftover Prime Rib Stir Fry

  • Leftover rare prime rib(note if well done just reheat the meat)
  • seasoned flour this is fry sauteed rare prime rib (flour with granulated garlic powder, salt, pepper, and ginger)
  • soy sauce, water
  • any kind of oil you prefer for frying
  • peppers
  • minced garlic and more  granulated garlic
  • salt, pepper, and cayenne if you want some heat
  • mixed julienne vegetables
  • see other suggestions for additions
  • a cleaned fresh head of broccoli
  • Optional: chopped tomato, tomato sauce, artichokes hearts, hot peppers, chopped black, onions, chopped celery, julienned carrots, any cubed boneless meats of any kind or lose Italian sausage, pineapple chunks, mandarin oranges

Tips:


  • Stir fry the vegetables in a separate pan from the meat or seafood
  • Add more water if the cabbage isn't cooked or other liquids like broth
  • Use fresh herbs when available
  • For quicker meals buy bagged coleslaw shredded cabbage or julienne stir fry package
  • Use cooked rice made separately of any kind (jasmine, long-grain, fast cooking whatever you like)
  • Any boneless meats worked great with this skillet or seafood

Other Additions and Suggestions


  • mushrooms sliced, carrots, peas
  • sprouts
  • water chestnuts
  • onions
  • a whole head of broccoli or cauliflower florets cleaned and washed
  • diced zucchini or eggplant
  • grape tomatoes
  • peanuts, cashews, or sunflower seeds
  • artichoke hearts
  • turn into surf and turf using shellfish of any kind
  • Use hot peppers instead of bell peppers for a little kick
  • bok  choy or celery chopped
  • Use any cubed meats or poultry leftover
  • For Vegetarian omit the meats
  • Serve over rice, ramen noodles, angel hair, on top of baked potatoes, in flour tortilla wraps, in a taco bowl, or fried rice

Leftover Prime Rib Stir Fry

This is a great way to repurpose leftovers after the holiday using Prime Rib, seafood, even Turkey! The vegetables, spices and flavor additions are wonderful together over rice or ramen noodles for a quick meal.

Ingredients

  • Leftover Prime Rib (you do not have to cook this again, we like it coated and fried crispy) reheated cut into stripsNote: if frying here is the coating:1 cup flour1 teaspoon salt and pepper
  • pinch of ginger1 teaspoon granulated garlic powder
  • Shake rare meat into the flour saute in oil until crispy and set aside.
  • For the Vegetable Stir Fry:
  • 3 cups shredded and sliced green cabbage or bok choy (or use store-bought bagged julienned premade cut vegetables for stir fry )
  • 3 cloves finely minced garlic
  • 1 cup chunky sliced carrots
  • 1 head of fresh broccoli florets without stems cleaned
  • 2 cups snap peas, regular frozen peas, or green beans
  • 1 or 2 sliced bell peppers
  • 2 tablespoons cornstarch mixed with 1/2 cup water
  • 1/4 cup soy sauce
  • 1 tablespoon honey or brown sugar
  • Salt, pepper, and cayenne pepper to taste you can also add ginger if you like the taste
  • Oil Suggestions:
  • Vegetable oil mixed with a little  Sesame Oil, Peanut Oil, or Canola Oil
  • Other suggestions:
  • 1 cup of any combination below:
  • Sliced mushrooms
  • Julienne carrots
  • Lobster, Crab, Shrimp, and scallops or another shellfish substitute for surf and turf
  • Fresh spinach
  • Chopped celery
  • Sliced green bell peppers
  • Artichoke hearts
  • Snow peas, Water chestnuts, Shredded cabbage, Cubed eggplant
  • Pineapple chunks or mandarin orangesAny kind of nuts can be added too, such as sliced peanuts, cashews, almonds (or seeds like sunflower) around 1/2 cup.

Instructions

  1. Fry the seasoning meat in a small amount of oil and keep warm.
  2. Note:  You can also do the same with fish. 
  3. In a large wok or deep frying pan,  add 2 tablespoons of the oil of choice.
  4. Add the cabbage, other vegetables you choose to use, garlic, salt, pepper to taste and cayenne or ginger if using.
  5. Note:  Add any of the mentioned seasonings to taste or use whatever you prefer.
  6. Saute until desired softness usually 3 to 4 minutes for normal stir fry until you like the vegetables softer.
  7. In a small cup mix the cornstarch with water and stir until smooth.
  8. Add the honey or brown sugar to the soy sauce and pour it into the stir fry mixing together.
  9. Stir in the cornstarch until the mixture thickens around 1 minute.
  10. If this becomes too thick add more water or if you like rice wine vinegar add just a few tablespoons of that to thin it out.
  11. Substitute: any boneless meats or seafood for this recipe you have leftover.
  12. Serving suggestions:
  13. Top the vegetables and meat over rice, ramen noodles, baked or mashed potatoes
  14. This stir fry can also be added to flour tortilla wraps, or in a taco salad bowl, o and over fried rice.
