Ingredients

  • 2 to 3 tablespoons extra virgin olive oil
  • 1 tablespoon lime juice
  • 1/2 teaspoon chipotle chile powder
  • 2 or 3 boneless breasts sliced in half, depending on how many sandwiches you want
  • slices of provolone or mozzarella
  • Any favorite bread or hard rolls, hamburger buns (sourdough, ciabatta, or whole grain)
  • 1 avocado, peeled, seeded, and sliced
  • lettuce of your choice, we prefer romaine or arugula
  • Marinate the chicken in olive oil, lime juice, and chipotle powder in a zip-lock bag for several hours or overnight.
  • Grill them on high heat on a gas grill or fry in a cast-iron grill grated pan.
  • Cook until juices run clear.
  • Toast the hamburger buns, add the cheese, lettuce, avocado, then the chicken topping with the chipotle sauce.
  • Note: substitute some ingredients with multigrain breads, low-fat, and low-sodium. Also, no antibiotics or additives to the chicken for a healthier diet.
  • Chipotle mayonnaise recipe:
  • 1 cup mayonnaise
  • 2 chipotles in adobo sauce
  • 1/2 of a lime juiced and seeded
  • 1 tablespoon adobo sauce
  • salt and pepper to taste
  • Place all in a food processor and blend until smooth and combined.

Instructions

  1. Marinate the chicken in olive oil, lime juice, and chipotle powder in a zip-lock bag for several hours or overnight.
  2. Grill, bake, air fry, or broil the chicken, drain any oil, and set aside, keeping them warm.
  3. Cook until juices run clear.
  4. Note: chicken should be 165 degrees in the thickest part using an instant read
  5. Toast the hamburger buns, add the cheese, lettuce, avocado, then the grilled chicken, topped with the chipotle sauce
