Lentil Chicken Soup Recipe

Start off the New Year with this hearty rich lentil soup.

I really love chicken soup, it's old fashioned comfort food that just makes you feel better. It's healthy too.

 There are so many things you can add to it and make it a whole meal. Here is one soup I love the richness of by adding lentils.


You can also add pasta or cooked rice and other beans if you prefer. Here's the basic soup recipe.







Lentil Chicken Soup Recipe
1 package 12 oz of lentils sorted and then cooked to package instructions


2 boneless chicken breasts


1 - 28 ounce can diced tomatoes


1 chopped celery stalk


dried parsley, oregano, and basil

2 teaspoons granulated garlic

3 cloves minced garlic

sliced carrots

salt and pepper to taste



5-quart saucepan

water

olive oil

grating cheese for garnishing



In the saucepan saute garlic in 3 tablespoons olive oil. Add around 3 quarts of water. Place the sliced carrots, celery chopped, tomatoes in the pot. Add the chicken breasts whole and simmer for around an hour. Skim off the top of anything that floats on the top from the chicken. Sprinkle herbs and spices evenly over the top of the water (around 2 teaspoons of each). Take the chicken out and dice it when cook and put back into the pot. Add the cooked lentils.

Salt and pepper to taste. Ladle into bowls and add grating cheese to the top.
