Slow Cooker Italian Sausage Chili

This Slow Cooker Italian Sausage Chili is so flavorful and super easy to make especially with leftover Traditional Sunday Sauce with meatballs and sausage.

The chili is filling, and a great way to repurpose leftovers and a comforting dish to make for your family.

This Italian Sausage Chili is loaded with Italian sausage crushed meatballs or both!

The sauce is slow-cooked in the crockpot mixed in with either sliced sausage or crushed meatballs however you certainly can use one of our other meat suggestions.

An option is to serve this dish over pasta or rice that is cooked separately or you can mix it in after the sauce is done cooking.

A complete meal with a slow-simmered tomato sauce and the addition of beans, pasta or rice will make a very hearty meal.

Serving Suggestions


This chili is so versatile, you can eat this with just as it is or dressed to the nines.

It certainly taste great with a dollop of ricotta cheese and shredded mozzarella on top but if you're counting calories, just eat it plain in a bowl, the sauce is delicious.

You can also adapt it by adding cubed zucchini in it or mushrooms with the peppers.

Our sauce is so basic just about anything with beans will enhance the flavors you want to add which will make it more of a stew than a chili.

Either way its a great way to repurpose leftover meat no matter what kind you have from a weeknight meal to have another great meal.

Slow Cooker Italian Sausage Chili Recipe

A hearty bowl of chili made with Italian sausage, beans, and slow-cooked in a crockpot! Add pasta or rice for a complete meal!

Ingredients

  • 1 - 1/2 pounds cooked loose or sliced  sausage or use  leftover  crushed meatballs from Sunday Sauce
  • Note you can use ground sirloin sauteed with fennel seeds around 1 teaspoon if you don't have sausage or meatballs
  • 1 -28 ounce can diced tomatoes
  • 1/2 cup Merlot wine
  • 1 -12 ounce can Tomato sauce
  • 2 cloves minced Garlic
  • 1 teaspoon granulated Garlic
  • 2 bell peppers sliced thin
  • Salt, Pepper Cayenne
  • 2 cans of white, red or black beans drained and rinsed
  • Olive oil if using ground meat to saute first.
  • Pecorino Romano grated cheese
  • Optional Rice cooked or your favorite Pasta of choice (baby shells, ditalini, or elbows is suggested) cooked to package instructions

Instructions

  1. If using raw meat saute in olive oil until browned on both sides first before adding to the slow cooker..
  2. Place the cooked meat into a 5 to 6-quart slow cooker.
  3. Add the rinsed beans, tomatoes, peppers, sauce, garlic spices, and Merlot.
  4. Set the slow cooker on high for 2 hours.
  5. Optional Serving Suggestions: top with grated cheese, mozzarella shredded, a dollop of ricotta cheese., garlic bread or Italian flavored croutons
