Italian Minestrone Soup

Wednesday, September 18, 2019
Italian Minestrone Soup is packed with everything under the sun delicious in it and can be either all vegetarian or made with several kinds of meat!

This soup really hits the spot on a chilly day and sure is a healthy addition to your diet!

This is thick bursting with fresh flavors, in a rich broth.

The meat can be ground, cubed or chunky and even omitted.

Making this soup can be adapted to using the ingredients you love.

We like all kinds of vegetables added and it is basically a meal all in one bowl.

I usually make two pans, one for me with only vegetables and one with the addition of meat.

Mom used whatever we had in the house,  garden vegetables, stew meat, hamburger anything goes, minestrone was the everything soup to me that happened to be leftover.

If she only had chicken she used chicken.

Fresh whole chunks of tomatoes, celery, carrots, mixed vegetables and whatever kind of pasta she happened to have in the pantry went in mom's soup and it was always fabulous.

Mom made this soup all winter long, it warmed us all up immediately and pure comfort food.

Back then we always had a loaf of homemade Italian bread on the table to sop up the broth, it has such a wonderful flavor.

You can't beat good homemade soup and these two recipes below are my favorites.

Scroll down and get two versions of Mom's Recipe, both are just a little different.

Minestrone

There is so many version online of this soup.

Minestrone was originally considered “cucina povera”– literally “poor kitchen” because it was primarily made with leftovers in Italy in order to not waste food.

Preferences are key and leftovers, as I said mom, wasted nothing, if it was in the refrigerator and needed to be cooked it went into the soup.

Therefore, if you grew up with a totally different tasting soup, that's the reason.

In Italy, nothing was thrown away, it was a sin, things were tough times and this was a healthy filling soup to feed a large family.

Different Regions

In Italy, minestrone varies by season and by region:

In the northern region of Lombardy, Negrin says, minestrone might include pasta and winter squash.

Farther south, in Tuscany, cannellini beans and cabbage or kale were used.

In the coastal city of Genoa in the northwestern region of Liguria, it would be finished with pesto.

Childhood Memories

This soup is full of delicious beef and beans, what a great combination.

I really like to add barley instead of orzo sometimes. I love barley soup and it gives it a thicker consistency.

Grandma used to make this soup when I was a child and loaded it up with oyster crackers.

Oh, the fond memories I have of that soup!

Now I make it all the time with whatever I have leftover, remember? Nothing goes to waste!

What an easy soup to make!

I really love to make a huge pot of soup and freeze it in individual containers.

I like to have lots of soups on hand in the freezer during the colder months.

Sure beats having to cook all day and it's perfect when you're feeling a little down and out.

Comforting During the Winter Cold Months

The soup is full of healthy vitamins and just what the doctor ordered for any cooler days in the year.

We make it all year long and adjust with vegetables from the garden.

We just love to add chunks of fresh zucchini or yellow squash in the addition of all the rest of the yummy ingredients to make the most comforting soup there is out there.

Both soups are similar, some of the ingredients used taste so different, you can adapt them any way you like.

The first photo of Minestrone soup is made with beef in this written post and is the second version using red kidney beans and chickpeas, just in case you might be wondering.

Thoughts, questions just ask, hope you love the recipes.

The Tastiest Broth

As I said before this broth comes out so delicious.

If you're making an all-vegetarian style Minestrone Soup, you can either make a vegetarian broth by boiling all the vegetables in a large stockpot, then strain it or continue on making it loaded with the meat of your choice.

You can then add them back to the pot and continue on with all the other ingredients for a true all vegetable style soup.

This rich broth is a favorite meal for years in our family.

Mom would add all leftovers to make a meat broth that sometimes included ham, beef, chicken and even cubed pork.

This meal will feed a large family economically.

I grew up on this soup, my kids loved it and still do, and now my grandchildren all love this.
