Hot Pockets are as much fun to make as they are to eat!


I love filling them with leftover meats like pulled shredded pork, leftover turkey or chicken, cooked chopped beef, anything can go in these you like!


Fun for back to school, after road trips, game day and so much more!


I usually love to make quick foods in cupcake tins like breakfast biscuits, but these were so much easier!


They are so versatile and perfect just about anytime you need a quick meal all in one crispy neat package!


I make quite a few at a time and freeze them, so when I am pressed for time ( I just reheat them).


These are perfect when I need something on the run, on the way to the beach, when someone is hungry in a pinch, with a new and creative idea almost every time.


The best part is how economical these are to make as most of the fillings we use are leftovers!

Holiday ham, turkey, and roast beef are perfect for these hot pockets.


These are so much healthier done in the air fryer, baked, or in a toaster oven.


So many possibilities to choose from whether you fill them with fruits for a sweet treat or making them for a quick dinner.


I always keep a few ingredients on hand that aren't perishable to make a quick hot pocket.


Using low-carb tortilla shells is a healthy alternative and really tasty!

Assembly is easy starting with a low-carb flour tortilla and your favorite filling and some shredded cheeses.


We love tortilla wraps so these are a bonus being air-fried and hot!


That's it, you're on your way to making a low-carb treat in minutes.


Anything you can create will be delicious when baked or air-fried with this crispy outer shell and all that melted cheese oozing out.





This is a colorful plate of filled homemade hot pockets made with flour tortilla and filled with eggs, bacon and ham with cheeses for breakfast




Ingredients to keep on hand


  • scrambled eggs
  • chopped fruits
  • cream cheese, any shredded cheese IE:cheddar, mozzarella, provolone 
  • peanut butter and jelly
  • Nutella
  • cooked meats IE ham, pepperoni, cooked bacon, canned meats of any kind leftover, tuna, boiled boneless chicken, or rotisserie chicken off the bone
  • shredded or sliced cheeses of any kinds
  • salad dressings, sour cream, taco sauce, marinara sauce, buffalo chicken sauce, barbecue sauce
  • shredded lettuce
  • chopped tomatoes, peppers, olives, or other raw vegetables you like for garnish
  • leftovers IE: chili, stews, leftover rotisserie chicken, and/or (cooked beef, pulled pork, burgers, hotdogs, etc) or anything that can be used as a filling

These taste great just the way they are, or dress them up with lettuce, tomato, sour cream, jalapenos and make a whole meal in itself if using a chili filling or even any meat fillings.


How versatile are these?

Really whatever is in your fridge can go in the middle of these!


Bananas, marshmallows, and chocolate chips are another favorite quick dessert my kids love!


Late-night snacks and even simple ingredients like apples and cream cheese fillings to satisfy a sweet tooth at a moment's notice!

Suggestions for Fillings



Note: For leftover casserole fillings, they need to be a thicker style IE chili, and stews, as too much liquid will ruin the pockets. Always add cheeses to those fillings.


Quesadilla

Any shredded cheeses, jalapeno peppers, olives, or whatever cooked meats you like.
Garnish after cooked with shredded lettuce, and tomatoes. sour cream


Leftover Thanksgiving Turkey

Sliced turkey with leftover cranberry sauce, Romaine lettuce, and your favorite cheese.


Steak and Beef

Sliced leftover roast beef or steak can be used for Philly tortilla wraps just add onions, peppers, and cheeses.


Rotisserie chicken:

Ceasar style wraps with dressing: cooked chicken shreds of Parmesan cheese and romaine lettuce
Buffalo chicken hot pockets; cooked chicken, buffalo sauce, blue cheese chopped and sharp cheddar
Cordon Blue: ham, cheese, cooked chicken


Leftover Hamburgers and Hotdogs:

Cheesedogs: Hotdogs sliced with shredded cheese or a dollop of chili for chili cheese dogs
Hotdogs cut up with sauerkraut, Dubliner cheese shredded, spicy brown mustard
Cheeseburgers, leftover hamburger cut up, shredded cheese, add some condiments of choice


Pork Ideas

Shredded pulled pork hot pockets with barbecue sauce and shredded cheese
Pork with apple slices, sharp cheddar
Shredded pork with Asian sauce and shredded cheese of choice


Sweet Things

Nutella
Peanut butter and jelly
Slices of apples and caramel
Raspberries or other fruit with cream cheese
Bananas, mini chocolate chips, mini marshmallows




These are flour tortilla filled with buffalo chicken filling, blue cheese dressing, shredded cheddar cheese



They all look the same!



Here is a solution I use when making an assortment of all different fillings.


You need to mark them with a vegetable of some kind, whatever you have.


For tuna, I add a slice of pickle on top with a toothpick.


For chicken, I use black olives with a toothpick.


You get the ideas, just add some kind of markers on top so you know what they are.


The first time I did this for breakfast, my son got the chili filled and was pretty shocked it was egg-filled!


I was making all the different ones for the freezer unmarked!

Tips PLEASE READ


  • Use around 2 to 3 tablespoons of filling
  • Don't overfill the tortilla
  • Always place filling in the center
  • Seam side down, to prevent opening and filling spillage
  • Always use butter or another flavored spray for crispier flaky pockets before cooking
  • For easy cleanup in the oven, place on parchment paper
  • If baking in the oven oil spray then bake at 400 degrees for around 10 minutes, keep checking for how brown they are
  • (remember everything is cooked but the tortilla for filling)
  • Use vegetables to mark them when making assorted fillings
  • If using an air fryer check the tortilla at 3 minutes, mine took a total of 7 minutes to brown
  • If freezing place on a cookie sheet, freeze, and add to freezer bags sheet wax paper or parchment between each. Thaw in the refrigerator overnight or reheat foil-wrapped.

Folding Seam Down




After filling in the center of each tortilla of filling choices, fold both sides to the center and then the two opposites to make your pocket.


Place seam side down on either parchment paper if baking or oil sprayed air fryer basket.



These are very hot fillings, cool before eating for at least 4 minutes.

Healthier Hot Pockets



These are deliciously baked, air fried (and although not my choice you can microwave these for 30 seconds for a quick alternative), and done in no time at all.


Use a low-carb tortilla or make your own homemade.


If freezing you can reheat your hot pockets using them wrapped in foil in a toaster oven at 400 degrees for 10 minutes,  unwrapped in an air fryer for 2 minutes, or wrapped in foil in the oven at 400 degrees for 10 minutes.


Substitute yogurt if using salad dressing for toppings or in a filling for flavor.


Low fat cream cheese also works great to bind your ingredients together.


Boil boneless chicken breasts to have chicken available for any fillings.

Easy and Quick



It's ok if you don't have an air fryer, baked is fine.


Of course, you can fry them, but these are made low carb and healthy.


Adapt to your favorite cooking method.

Air Fried Flavor



The outside is crispy and perfectly browned and they taste fried without the extra calories.


Warning, the inside is extremely hot!


Let cool or cut in half before serving.


These will cook quickly so keep an eye on them and check them at 3 to 4 minutes.

Ingredients

  • Low Carb Flour Tortilla
  • Butter flavored oil spray
  • Tools Needed
  • Baking Pan
  • Optional Cooking Methods: Air Fry, toaster oven, or oven-baked
  • or microwaved
  • Filling Suggestions:
  • scrambled eggs
  • chopped fruits
  • cream cheese
  • peanut butter and jelly
  • Nutella
  • cooked meats IE ham, pepperoni, cooked bacon, canned meats of any kind, leftover turkey or beef, tuna, boiled boneless chicken, or rotisserie chicken off the bone
  • shredded or sliced cheeses of any kinds
  • Garnish
  • shredded lettuce
  • chopped tomatoes, peppers, olives, or other raw vegetables you like for garnishing the cooked hot pockets

Instructions

  1. Instructions: All filled flour tortilla needs to be light oil sprayed before cooking
  2. Layout a tortilla, place up to 3 tablespoons in the center then fold sides to the middle creating a square pocket. Cook by one of the methods below.
  3. For Air Fried fill, fold seam side down, air fry on 400 for 7 minutes checking at 4 minutes to see if they are browned.
  4. For the Baking or Toaster oven, fill, and fold seam side down on parchment paper at 400 degrees 10 minutes.
  5. Optional: Microwave for 30 seconds, ut they will not brown.
  6. Note: For leftover casserole fillings, they need to be a thicker style IE chili, and stews, as too much liquid will ruin the pockets. Always add cheeses to those fillings.
  7. Quesadilla
