This is a delicious marinade bursting with Italian flavors is based on the Bistecca Alla Fiorentina.


The steaks are made from a thick cut of the T-bone or Porterhouse steak.


Bistecca Alla Fiorentina can be paired with nearly anything such as creamy polenta, pasta dishes, grilled artichokes, and today I am making our favorite Roasted Vegetables.


When shopping for this dish, use the best meat, sea salt, coarse grind black pepper, and the best Chianti or Balsamic vinegar that you can afford.


The marriage of flavors from all of these ingredients will reveal a noble meal of authentic Italian cookery.


For the best results grill or pan fry using a thick cast iron pan and make sure that they are very hot.


Our Tuscan blend is not as basic as the salt, pepper, and vinegar, we have a gourmet flavored steak that will be the only recipe after one bite you'll ever want to use going forward, it's fabulous!


This recipe is made for very thick cuts of steaks, you also can use this marinade on chops, fish fillets and thin cuts of meat those are ideal for cooking on a stovetop grill pan or indoor electric grill however I reserve large thicker cuts for an outdoor barbecue, where you can use to cook the food evenly.

Cooking Steaks



Steaks can be pretty intimidating trying to cook it to each person's preference.


Follow the steps below and use an instant meat thermometer to get your steaks cooked perfectly.


Everyone in our home likes their steak a little differently and using the right tools will take all the guesswork out of grilling.


There are several ways to also cook these steaks, I would reserve again cooking outdoors for the extra thick cuts and use the marinade for thinner cuts indoors.

Grilled. Baked, Air Fry

  • Grilled: Heat Grill on medium heat, place the steaks on oil sprayed grates, grill them using the chart below
  • Broil: Prepare a broiler pan with oil spray, broil on medium heat for around 30 minutes flipping once for medium
  • Air Fry: Place the steak into the air fryer basket. Cook the steak for 8 to 10 minutes (or to your desired doneness). Remove the steak to a plate, tent, and allow to rest 5 to 10 minutes
  • Pan Fry: Just add a few tablespoons of oil in a cast-iron skillet and fry until crispy on the outside or how you like your steak refer to the cooking chart

Summer Grilling and Steaks



Although I reserve this recipe for holiday summer grilling and barbecues most of the time, as I mentioned before I do use this delicious marinade on other meats like chicken and fish thinner cuts for an indoor cook-in.


The char on steaks makes these an authentic flavor when done the old-fashioned charcoal-grilled style and a melt in your mouth flavored gourmet meat.


Served with whatever sides you prefer, we always try to keep them on the lighter side with such a large portion of meat, enjoy and let us know how you like our recipe.

Tuscan Grilled Steak

A flavorful Tuscan Bistecca Alla Fiorentina using a good red wine marinade that's a perfect Italian grilled steak
Prep time: 3 H & 10 MTotal time: 3 H & 10 M

Ingredients

  • 2 tablespoons olive oil
  • 5 sprigs of fresh thyme
  • 1 tablespoon melted unsalted butter 
  • 1 fresh sprigs rosemary 
  • 3 minced garlic cloves 
  • 2 teaspoons freshly cracked black pepper 
  • sea salt to taste 
  • 3 tablespoons lemon juice freshly squeezed
  • 1/2 cup Chianti or other dry Red Wine 
  • 2- 2 lb each Porterhouse steaks or T Bones
  • Optional: for those who love a little heat, add 1/2 teaspoon of red pepper flakes

Instructions

  1. Place steaks in a large container with all ingredients and marinate for at least 3 hours or overnight.
  2. Although we prefer these steaks grilled using the old-fashioned charcoal method there are several other cooking methods.
  3. These are great pan-fried in a cast-iron skillet using around 1/4 cup of the marinade.
  4. Also, you can broil in the oven using a broiling pan or cast iron pan basting with the marinade.
  5. Air Fryer Method: Place the steak into the air fryer basket. Cook the steak for 8 to 10 minutes (or to your desired doneness). Remove the steak to a plate, tent, and allow to rest 5 to 10 minutes
  6. Grilled: Heat the grill to medium heat.
  7. Baste with some of the marinades.
  8. Cook to desired doneness (see under notes).

Notes:

Using a digital instant-read meat thermometer, check the internal temperature of your steaks while they’re still on the grill.

You’ll want 130 degrees for rare, 135 degrees medium-rare, 145 degrees medium, 150 degrees medium-well, and 160 degrees for well done. Keep in mind that steaks will continue to rise a few degrees once they’re off the grill

Transfer the steaks to a serving dish, cover loosely with aluminum foil, and let rest for 3 minutes before serving.
