Low Carb No Bake Cheesecake Pie

A delight to make and eat this deliciously easy recipe.

Lower in fat and virtually low carb and lower in sugar.

The perfect diabetic dessert in moderation with the right fruit and low-carb ingredients.

Recently my son and husband were diagnosed with diabetes.

I am developing recipes that are healthier and keep him from craving all the foods with sugar so he won't be feeling he is missing out. This one's a keeper.

The smooth filling and topping were a huge success on my first try.

Of course, strawberries are one of his favorite fruits, but with any fruits, they still have natural sugars so limit them.

Berries are the best bet when it comes to diabetes, but check with your doctor first to make sure what he recommends for amounts.

You certainly can choose any number of fruits that are lower in sugar and not use any fruits at all.

Steps to Make Sugar-Free Cheesecake Pie An Easy Treat

  • Place the cream cheese in a mixing bowl and beat until fluffy.
  •  Add the sugar-free pudding mix and slowly add the milk beating until light and fluffy. 
  • Put it in the refrigerator. 
  •  In a food processor pulse the margarine or butter, oatmeal, cinnamon, and graham cracker till fine. Press into a pie plate. 
  • Bake at 400 degrees for 5 minutes.
  • Cool. Pour the filling on top of the crust. Arrange the berries on top, toss in warmed sugar-free jam or. sprinkle it with a sugar substitute if you wish.

  • sugar-free white chocolate pudding mix you can use any sugar-free pudding you like
  • milk or sugar-free milk
  • less fat cream cheese
  • oatmeal
  • reduced-fat margarine or use butter if you want
  • graham cracker (1 full graham cracker added just one for texture)
  • cinnamon
  • sliced strawberries or use raspberries or other low-sugar fruit 
  • Optional: sugar-free strawberry jam (toss the strawberries in for a glaze effect) warmed in the microwave for 10 seconds

Other Low Sugar Fruits

  1. berries, are often high in fiber and contain very little sugar
  2. peaches
  3. blackberries
  4. blueberries
  5. lemons and limes
  6. apples
  7. pears

Just remember just because it's low in sugar, natural sugar is in fruit so it's never 100% sugar-free and everything needs to be in moderation if you're diabetic, check with your doctor for more information or with a nutritionist or refer to American Diabetes for references on portion control.

A no- bake low carb sugar-free cheese pie with strawberries

Ingredients

  • 1 package sugar-free white chocolate pudding mix you can use any sugar-free pudding you like
  • 1 cup milk or sugar-free milk
  • 1- 8-ounce package 1/3 less fat cream cheese
  • 2/3 cup oatmeal
  • 2 tablespoons reduced-fat margarine or use butter if you want
  • 1 graham cracker (1 full graham cracker added just one for texture)
  • 1/2 teaspoon cinnamon
  • 1/2 cup of very thinly sliced strawberries around 3 or 4 berries or other low-sugar fruit
  • Optional: sugar-free strawberry jam (toss the strawberries in for a glaze effect) warmed in the microwave for 10 seconds

Instructions

  1. Place the cream cheese in a mixing bowl and beat until fluffy. Add the sugar-free pudding mix and slowly add the milk beating until light and fluffy. Put in the refrigerator.
