Lower in fat and virtually sugar-free.

The perfect diabetic dessert.

Recently my son Curt was diagnosed with diabetes.

I am developing recipes that are healthier and keep him from craving all the foods with sugar so he won't be feeling he is missing out. This one's a keeper.

The smooth filling and topping were a huge success for my first try.

Of course, strawberries are one of his favorite fruits, but with any fruits, they still have natural sugars so limit them.

Berries are the best bet when it comes to diabetes, but check with your doctor first to make sure what he recommends for amounts.

You certainly can choose any number of fruits that are lower in sugar and not use any fruits at all.

Treat Yourself



We know all too well how hard it is to adapt to a new way of living.

Fruits



Any fruits can be used, even freshly sliced apples, peaches or cherries.


However always limit the amounts, we weight just about everything he eats now or remember our motto "everything in moderation".


You can find many different fruits low in natural sugar.


Some other favorites high in fiber are raspberries and blackberries, we are doing lots of research to keep him healthy.


As I said previously, always check with your doctor before indulging in fruits and see how much a day you are allowed.

Sugar Free No Bake Cheesecake Pie

prep time: 10 minscook time: total time: 10 mins
This is a diabetic friendly keto no bake sugar free cheesecake pie

ingredients:

1 package sugar-free white chocolate pudding mix you can use any sugar-free pudding you like
1 cup milk or sugar-free milk
1- 8-ounce package 1/3 less fat cream cheese
2/3 cup oatmeal
2 tablespoon reduced-fat margarine or use butter if you want
1 graham cracker ( yes just one for texture)
1/2 teaspoon cinnamon
Sliced strawberries or use raspberries or other low sugar fruit

instructions:

Place the cream cheese in a mixing bowl beat until fluffy. Add the sugar-free pudding mix and slowly add the milk beating until light and fluffy. Put in the refrigerator. 

In a food processor pulse the margarine or butter, oatmeal, cinnamon, and graham cracker till fine. 
Press into a pie plate. Bake on 400 degrees for 5 minutes. Cool.

Pour the filling on top of the crust. Arrange the berries on top. You can sprinkle with a sugar substitute if you wish.
