The perfect diabetic dessert.
Recently my son Curt was diagnosed with diabetes. I am developing recipes that are healthier and keep him from craving all the foods with sugar so he won't be feeling he is missing out. This one's a keeper.
The smooth filling and topping was a huge success for my first try.
Sugarless No Bake Cheesecake Recipe
1 package sugar free white chocolate pudding mix you can use any sugar free pudding you like
1 cup milk
1- 8 ounce package 1/3 less fat cream cheese
2/3 cup oatmeal
2 tablespoon reduced fat margarine or use butter if you want
1 graham cracker ( yes just one for texture)
1/2 teaspoon cinnamon
Sliced strawberries or use raspberries or other low sugar fruit
Place the cream cheese in a mixing bowl beat until fluffy. Add the sugar free pudding mix and slowly add the milk beating until light and fluffy. Put in the refrigerator.
In a food processor pulse the margarine or butter, oatmeal, cinnamon and graham cracker till fine.
Press into a pie plate. Bake on 400 degrees for 5 minutes. Cool.
Pour the filling on top of the crust. Arrange the berries on top. You can sprinkle with a sugar substitute if you wish.
