This is the easiest way to peel fresh plum tomatoes or any kind of tomatoes for that matter. I love them in stews, sauces, pizza's and so many recipes. When they are on sale I buy bushels. The skins are usually something I like to avoid in my sauces although you can keep them on and puree skins and all. I prefer to remove the skins and it's so easy, they slip right off as you can see in my short video clip. Peeled tomatoes can be frozen whole, pureed of course canned. My dad always did this every year to marinara sauce with them. I will always remember his technique it was so easy to peel tomatoes using this method.

Any kind of tomatoes ( I had 7 pounds of plum tomatoes)
5 to 8 quart sauce pot
Salt just a pinch
Place the tomatoes in sauce pot cover with water. Boil between 5 and 8 minutes.
Immediately place them in cold ice water.
The skins will loosen and become easy to peel.
When they become cool enough to handle peel the skins off.
