Parmesan Crusted Roasted Tomatoes is one of my favorite brunch recipes!

These can be served as an appetizer, over a chef salad or a great side dish for any meal.

When rosa plum tomatoes are in season, this is my go-to recipe and I can't wait to make them.

As a child my grandma Victoria would bake these all summer long.

Her recipe from her mom from Rome, Italy, taught her at a young age of 11 on how to cook these.

Back in the late 1800s, these were a banquet to enjoy during the warmer months and we continue to make this recipe in her memory.

These are simple pantry ingredients, healthy and delicious!

Oven Roasting Tomatoes

If you ever wanted the easiest side dish ever, you just found it.

Tomato lovers who have had this delicious fruit/vegetable already know what a gourmet treat these are.

Baked with fresh garlic and herbs baked to a soft but still firm melt in your mouth slice of a truly remarkable vegetable.

Tomatoes are full of great health benefits.

They're a good source of the major dietary antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer.

Plus they are full of vitamin C, potassium, folate, and vitamin K so it's a win-win vegetable all the way around.

Ingredients You Will Need:

  • Sliced Rosa Plum Tomatoes
  • Freshly minced garlic around 3 cloves
  • Freshly chopped parsley
  • Grated Pecorino Romano cheese
  • Extra virgin olive oil enough to drizzle over the top
  • salt, pepper, cayenne pepper to taste
  • Freshly chopped basil Dried oregano
  • Optional: Shredded mozzarella

Parmesan Roasted Tomatoes

These are an Italian delight using Rosa Plum tomatoes sprinkle with herbs and garlic topped with bread crumbs and roasted in the oven.


  • 4 Sliced Rosa Plum Tomatoes
  • a handful of Freshly minced garlic around 3 cloves
  • a handful of Freshly chopped parsley
  • 1/2 cup of more Grated Pecorino Romano cheese
  • Extra virgin olive oil enough to drizzle over the top
  • salt, pepper, cayenne pepper to taste
  • a handful of Freshly chopped basil
  • 1 teaspoon or more Dried oregano
  • Optional:  Shredded mozzarella
  • Serve on a bed of Romaine lettuce for garnish with a drizzle of balsamic vinegar and more extra virgin olive oil.


  1. Preheat oven to 400 degrees and line a cookie sheet with parchment paper.
  2. In a small bowl mix around 1 cup of bread crumbs of choice with 1 tablespoon of grated cheese and 2 tablespoons of extra virgin olive oil and set aside.
  3. Wash and dry the Plum tomatoes then thickly slice lengthwise (as many as you want) per family.
  4. Place these on a parchment-lined cookie sheet or casserole pan.
  5. Sprinkle the tops of each tomato with Italian style bread crumbs with parmesan cheese added to them.
  6. Add a little of each:
  7. Minced garlic
  8. Chopped fresh parsley, basil, oregano, spices and whatever else you like for seasonings
  9. Grated cheese
  10. Extra Virgin olive oil
  11. salt, pepper, cayenne to taste
  12. On a parchment-lined cookie sheet place, the cut-up plum tomatoes.
  13. Drizzle with more olive oil over the top of each one just a little!
  14. Roast in a hot oven at 400 degrees until soft but not mushy around 20 minutes. 
  15. Around 5 minutes before they are done sprinkle the tops with mozzarella if desired.
  16. Serve on a bed of Romaine lettuce for garnish with a drizzle of balsamic vinegar and more extra virgin olive oil.
  17. For Grilling:
  18. I place the cut-up tomatoes and same recipe above on an oil sprayed piece of foil and then place foil directly on the hot heated grill for around 15 to 20 minutes leaving it vented open just a little bit. Check around 10 minutes to see if they are softened and getting crisp.
