Apple Blueberry Cinnamon Muffins

These Apple Blueberry Cinnamon Muffins are the perfect breakfast muffins!

The muffin tastes similar to an apple cake, homemade from scratch.

The delicious combination of flavors is perfect together and then with a hint of cinnamon add that comforting touch!

The cake-like muffins can also be used for a dessert.

Add a dollop of whipped cream on top and you have a whole new use, besides a breakfast or brunch muffin.

Perfect addition with that first cup of coffee or afternoon tea!

I love apples in just about everything and they hold together so well, they are perfect for traveling.

The smell as they are baking will certainly have your mouth watering for one.

The whole kitchen smells wonderful! I just love quick bread with fruits and this is easy to make and my go-to recipe.

It's the best recipe for muffins and so versatile.

Add whatever fruits you like. This basic recipe is sure to please everyone that tries them.

Making Muffins are so easy!



There are so many possibilities when it comes to flavoring muffins. This is a baked muffin with a crispy outside and soft moist inside.


I really like the combination of the tartness in the apples and then bringing it together with the sweetness of the blueberries.


The two fruits together really do compliment each other. Serve them heated up or grilled with butter in the morning,  grilling them just brings them even to a new level of deliciousness.

Tips:

  • These muffins can be served at breakfast, brunch, or a quick dessert with ice cream or whipped cream
  • Spray the muffin pan generously, use the liners after they are cool to keep from sticking together
  • Always blot dry the rinsed fruits
  • You can use all oil instead of applesauce
  • Bake until browned oven temperatures vary around 25 minutes and check them
  • Store muffins in an airtight container after they cool
  • Use an ice cream scoop to fill the muffin pan

A moist delicious apple blueberry breakfast muffin everyone loves. It's perfect all year round with a hint of cinnamon it shouts summer or fall!

Ingredients

  • 2 cups sugar, (or use 1 1/2 cups for a less sweet muffin) 
  • 2 eggs 
  • 1 cup oil 
  • 1 tablespoon vanilla 
  • 3 cups flour 
  • 1 teaspoon salt 
  • 1 teaspoon baking soda
  •  1 teaspoon cinnamon 
  • 2 cups peeled, cored, diced apples
  • 1 cup blueberries

Instructions

  1. Preheat oven to 350 degrees and line muffin pan with 18 paper liners.
  2. With a mixer, cream together sugar, eggs, oil, and vanilla.
  3. The mixture should be a pale yellow.
  4. In a clean bowl, whisk together flour, baking soda, salt, and ground cinnamon.
  5. Add dry ingredients to creamed mixture and mix until combined do not over mix.
  6. This batter is thick like cookie dough.
  7. Fold in the fruits.
  8. I use an ice cream scoop to fill each liner.
  9. Optional: sprinkle to the top of each muffin with a cinnamon-sugar mixture. or use a crumb topping below:
  10. Crumb Topping:
  11. 1/4 cup, 
  12. 2 tablespoons of softened butter 
  13. 1/2  teaspoon of cinnamon, add some chopped walnuts and sprinkle this on top before baking the muffins
  14. Bake at 350 degrees for around 20 to 25 minutes.
