This recipe for Summer Berry Muffins is so easy anyone can make them from scratch.



All the ingredients you usually have in your pantry except for the fruits.



You won't believe how quickly these mix up and how nicely they rise.



I love a great crown on my muffins and these always come out perfect.



I like to always make sure my baking ingredients are fresh and new. Always check your baking soda to see if it fresh.



It has quite a long shelf life of three years, however, I like to replace mine after one year.

Some Suggestions and Tips



There isn't a lot of liquid in these muffins but the banana keeps them moist, so keep them in a container after they cool.


Don't overbeat this batter just stir until moistened then add the berries.


Keep leftover muffins in a covered container in the refrigerator and reheat in a toaster oven or on a griddle.

Summer Berry Muffins

These are homemade muffins made with fresh fruits. They are light and tender and taste like a delicious sweet cake.
prep time: 10 Mcook time: 35 Mtotal time: 45 M

ingredients:

  • 1 large banana mashed
  • 1/2 cup of berries ( blueberries, red raspberries, blackberries,  you can substitute peaches, cherries, apricots or apple, mango or pineapple)
  • 2 cups of sugar
  • 1/4 cup milk
  • 1 teaspoon cinnamon
  • 2 teaspoon baking soda
  • 1/2 cup vegetable oil
  • 2 cups flour
  • pinch of salt
  • 2 eggs
  • Optional: 1/2 cup coconut

instructions:

How to cook Summer Berry Muffins

  1. In a large mixing bowl, oil, eggs, cinnamon, baking soda, sugar, and salt mixing together.
  2. Add the flour and stir till blended. Fold in fruits.
  3. Pour into greased muffin pan and bake on 350 degrees until the middles are set around 35 to 40 minutes.
  4. Sprinkle with powdered sugar or a cinnamon sugar mixture on top when cooled.
