This is a baked frittata with eggs, cheese, and just about anything else you want to throw into the casserole-style breakfast.


Mom's Egg Frittata is one of the best Italian comfort foods. This is a traditional authentic old-world Italian breakfast.



The pepperoni and eggs with potatoes are so delicious anytime and even in a sandwich with toasted Italian bread.



There are so many variations to the recipe, we decided instead of standing in front of the stovetop to make an easier no-fuss version in the oven.



Breakfast, brunch, or just a quick mid-afternoon Sunday dinner, this frittata is an economical way to throw together a fast meal and feed many.



It is so delicious and simple using all in one pan with potatoes, eggs, and meat or baked as a casserole.



The one memory that really stands out for me is holiday time, this was mom's go-to recipe especially on any holiday or weekend we had sleepover company visiting.

Fritta sometimes had what mom would say everything but the kitchen sink in it and it was a great way to get rid of almost expired meats in the refrigerator, the good old days for sure with memories as a family.

Everyone had a different filling they like, sometimes mom would do them in cupcake tins just to have individual servings, which is a great idea for picky eaters.


I was always picking out the pepperoni from my breakfast dish, I wasn't a big fan of any meats back then.


This can be made all vegetarian with all my veggie suggestions or meat lovers can load it up with cooked meat.


Frittata is a very hearty breakfast with meats and can be certainly perfectly tailored to a vegetarian style also.


Traditionally mom always made this in a huge frying pan, as time went on, casseroles were quick and easy and became my favorite way to do this and I actually do both when times permits.

Meats and Vegetables


  • cooked sausage of any kind
  • cooked bacon
  • pepperoni
  • chopped hot capicola
  • mortadella chopped
  • olives
  • Italian cooked sliced sausage
  • mushrooms
  • onions
  • peppers hot or sweet 
  • chopped leftover cooked steak
  • artichoke hearts chopped
  • shredded zucchini
  • chopped raw asparagus
  • spinach raw, arugula raw, or boiled and drained escarole
  • finely minced eggplant and any other vegetables or cooked meats you prefer in making a regular omelet
  • cooked baby shrimp or sauteed scallops

Tips


  1. Brown the potatoes using by baking, in an air fryer or broil, see instructions in the printable card below.
  2. Use olive oil and butter together when using the pan-fried method.
  3. Always used cooked meats, leftovers are great in this even pork chops cut up.
  4. Finely grate all vegetables using zucchini or eggplant mince the others to cook faster.
  5. Use any cheeses you prefer but the stronger tasting cheeses make the best like provolone or Italian blended.

Baked or Pan Fried?



Over the years I started to try putting everything in a butter baking pan and baking this whole dish together, it's like a crustless quiche.


Mom always did this Italian egg dish,  in a frying pan on the stovetop.


It comes up high and puffed up on top and the cheeses brown nicely on top.


The cheese gets nice and crispy if you broil it for a few minutes, that's how I love it!


We always tried to cut calories now and find healthier versions of our favorite foods.

Casserole Frittata




The casserole is layered with vegetables, cheese, meats, and super simple to make this baked frittata.



If you prefer the traditional old school way, it's faster and the biggest difference is standing over the stove, that's really about it.



I crisp up the potatoes now using an air fryer first or you can even broil them first, but one thing I learned is any potatoes you use, make them crispy first!

Mom's Frittata

Mom's Frittata

This a very old recipe from my Mom's and how she made an Italian frittata with eggs, pepperoni and potatoes. She made this often during the Holiday but it was great all year long. There are two versions of this recipe, pan fried or baked.

Ingredients:

  • 1 cup cubed cooked potatoes or use frozen hash browns thawed or grate fresh russet potatoes you will need just 1 potato
  • 4 eggs
  • 1/2 cup thinly sliced pepperoni or use chopped hot capicola ham, any kind of cooked bacon or cooked Italian sausage
  • 1 /4 cup of assorted vegetables see options
  • 1/2 teaspoon granulated garlic or use 1 teaspoon minced fresh garlic
  • 2 tablespoons milk or water
  • salt, pepper, cayenne pepper to taste
  • Optional herbs for garnishing: freshly chopped parsley  freshly chopped basil
  • around 1 cup or more shredded provolone, grated Parmesan, shredded mozzarella, Italian blended shredded cheese or extra sharp cheddar cheese
  • butter or olive oil
  • Optional Additions: cooked sausage, cooked bacon, pepperoni, chopped hot capicola, mortadella chopped, olives, mushrooms, onions, peppers, chopped leftover cooked steak, artichoke hearts chopped, cooked shrimp, cooked scallops, shredded zucchini, finely minced eggplant and any other vegetables or cooked meats you prefer in making a regular omelet.
  • Two Cooking methods: Pan fry as an omelet or you can Bake this like a  casserole see below for instructions.

Instructions:

  1. Spray a pie plate with cooking spray. 
  2. Press cubed or hash brown potatoes on the bottom of the pie plate and drizzle with olive oil or melted butter add a little salt, pepper, and granulated garlic over the hash browns evenly. 
  3. Bake at 400 degrees until starting to brown and get crispy around 25 minutes or you can air fry to save time at 400 degrees for 10 minutes or broil on high until crispy then press into the dish.
  4. Remove from the oven. 
  5. Beat the eggs in a bowl adding milk, 1/2 teaspoon granulated garlic, salt, pepper to taste and fresh parsley, or use dried flakes. 
  6. Pour into the hash brown crust.
  7. Place sliced pepperoni or other meats or vegetables evenly on the top.  herbs, salt, pepper, or whatever else you are using in this breakfast-style frittata.
  8. Sprinkle generously with shredded cheese and bake at 400 degrees until the middle is set.
  9. Pan Fried:
  10. Add around 2 tablespoons of butter to the pan and melt it.
  11.  Add the potatoes and saute on medium heat with granulated garlic until lightly browned around 10 minutes if you like crispy. 
  12. Add any other vegetables or meat to heat through and cook to your preference.
  13. Pour the egg mixture on top over the hash browns, add whatever else you like for seasoning like salt, pepper, herbs, etc. 
  14. Cook a few minutes flip, add the cheese and cook until set in the middle and cheese melts.

  10. I'm loving this! I will often make a simple frittata after a long day at work, and I often put pepperoni in it, because it's fast, easy, and delicious. I've never tried it with potato though. Gotta try it your mom's way next time!
