They really are so easy to make and you will not be too happy with me on your new addiction these will create!

Shortbread Cookies
The original cookie is a traditional British biscuit usually made from one part white sugar, two parts butter, and three parts plain wheat flour.
These cookies are just an adaption of a buttery cookie with the addition of mini chocolate chips and such a delight!
I became addicted to these cookies after one bite!
The cookies taste the best when baked slightly still leaving the tops white and not browned.
You can adapt the cookie any way you prefer, if you're not a chocolate chip lover, leave them out.
Tools You Will Need:
- Mixer
- Bowl
- Measuring cups
- Measuring spoons
- Parchment paper or Silpat mat
- Cookie sheets
- Spatula
- Large mixing spoon
- Round flat bottom glass
- Rolling pin
- Cookie Cutters Optional
Ingredient You Will Need To Make Chocolate Chip Shortbread Cookies

- salted butter softened
- powdered sugar and more for later
- vanilla extract
- all-purpose flour
- miniature chocolate chips
Tips For Making Perfect Shortbread Cookies
- Always cream the sugar and butter for 3 minutes
- Use a timer for precise timing
- Do not overmix the dough
- Just blend the flour in until the white is gone
- Add the chips in by hand
- Always chill the dough first in either the bowl or a ziplock bag
- Cut the shapes by hand, use cookie cutters or shape in balls then flatten with a sugared glass
Suggestions and Substitutions:
- Chopped currents or raisins
- Chopped pistachios or other nuts, seeds for those with allergies like pumpkin
- Other kinds of chocolate you prefer
- Dip the ends in melted chocolate
- Dip the ends in white chocolate and sprinkles or pistachio
- Change the extract to almond dip in chocolate and coconut

Chocolate Chip Shortbread Cookies

These are the most addicting shortbread chocolate chip cookie on the planet. With just 5 ingredients you will be on your way to a delicious decadent cookie to add to the list of loved chocolate chip cookie recipes!
ingredients:
- 1 cup salted butter softened
- 2/3 cup powdered sugar and more for later
- 1/2 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 3/4 cup miniature chocolate chips
instructions:
How to cook Chocolate Chip Shortbread Cookies
- Cream the butter and sugar for 3 minutes, add the vanilla.
- Making sure you do not overmix this dough, add the flour just until it's blended evenly, maybe 40 seconds to a minute.
- Fold in the chocolate chips,( easier by hand so as not to crush them up).
- Cover and chill in the bowl for 2 hours.
- Roll into balls and flatten with a glass dipped in powdered sugar and place on a cookie sheet, they should be 1/4 inch thick.
- Or roll the dough out to 1/4 inch thick, cut into rounds or whatever shape you want.
- Traditional shapes are round or rectangular.
- Place on cookie sheets lined with parchment paper or Silpat mat.
- Preheat oven at 325 degrees.
- Bake 17 to 18 minutes or until the edges turn brown.
- Cool completely.
- For Chocolate Dipped Cookies:
- 1 cup semi-sweet chocolate melted
- 1/2 cup heavy cream
- simmer together in a small saucepan just until melted.
- Dip cookie on one end and dry on wax paper.
