A Peanut Butter Lovers Delight
When I was growing up, just the smell alone of peanut butter cookies baking was delightful.
My mom would make the dense old fashioned peanut butter cookies with the criss-cross marks in the top.

Some Tips
Since I mail out a lot of cookies at Christmas time to Upstate New York where the family still lives you have to pack them good.
I usually save any shoe boxes during the year, they are perfect.
All of these cookies I bake travel well boxed up, and stay fresh.
Separate them in Baggies
If I am baking all kinds of cookies, I always separated them in individual freezer bags to keep the flavors from rubbing off into other cookies.
I hate when all cookies taste alike!
Tips
I use an ice cream scoop to make them all the same size.
Make sure the oven is preheated to 375 degrees or they won't cook evenly.
The Batter
Whip the sugars together with the butter until light and fluffy before adding the egg and other ingredients.
The batter is thick but a little sticky.
The cookies will puff up nicely, if you want flatter cookies then pat them down with a flour flat bottom glass.

Antonio loves to help me bake, but he adds colored sprinkles to these cookies, that's the only way he likes them.
Antonio is four years old and a great helper and loves these cookies like his dad did when he was his age.

Of course, it's an added sugar, so we just make one pan of cookies.
Antonio devoured them and hardly could wait for them to cool off.
One More Tip
Pour your sprinkles in a bowl first, Antonio dumped the whole container all over the Silpat mat.
I didn't care we made some fantastic memories together and he felt so bad!
He didn't want me to take any more photos of the epic fail!
What a good boy he is and this was so much fun to make with him.
Baking Tip
When baking these cookies, I always use parchment paper or bake on a Silpat mat.
It makes it much easier to remove them.
Be sure to let them cool at least 5 to 8 minutes before removing from your cookie sheet.
The Longer You Bake Them
We have all kinds of preferences on how cookies should be.
I have my oldest son that will eat them overcooked.
My younger son loves them crisp but not overcooked and my husband loves them undercooked.
You should experiment with a few before making a whole cookie sheet and see how you like the results for your family taste.
Chocolate Chips and More
I have added chopped peanuts to these with chocolate chips.
There are so many additions that go great with peanut butter, however, I always go back to the same method here.
Some love shredded coconut and macadamia nuts.
Other love the additions of caramel and peanut chocolate coated bars.
Experiment
I have experimented with candy bars and they are way too sweet for me, you can change these up however you like.
I really don't mind the without chocolate in them either, the cookie plain is marvelous too!

Best Ever Peanut Butter Chocolate Chip Cookies

These are the best peanut butter chocolate chip cookies I ever made or had. These buttery crispy cookies are addicting
ingredients:
1 1/2 cups flour
1/2 cup peanut butter
1 cup butter
1 teaspoon baking soda
1 egg
1 teaspoon vanilla
1/2 cup white sugar
1/2 cup light brown sugar
1 1/2 cup chocolate chips, chocolate chunks or cut up candy bars
Preheat oven to 375 degrees.
instructions:
Beat together the sugars and butter till light. Add the flour, baking soda, vanilla and egg to the sugar mixture till blended together. Using a spatula fold in the chocolate chips.
Drop 1 teaspoon full of dough on a parchment lined cookie sheet. Sprinkle with white sugar.
Bake at 375 degrees 8 to 10 minutes until edges start to brown.
Cool 4 minutes before removing from cookie sheet.
Alternative bar cookie method:
These are not thin and crisp like the cookies.
Spread into a jelly roll pan and bake till middle is set around 15 to 18 minutes. Cool cut into bars.
