Butternut Squash Arugula Winter Raspberry Salad is my kicking off to a healthy diet New Year!


This is my go-to salad in the winter months since I can't get my favorite butternut squash all year long!


I love Butternut sweet squash with arugula and fresh fruit dressing just like a watermelon salad which is another favorite salad during the summer months.


Take a look at this light colorful and delicious homemade salad that packs a great taste from fruits to vegetables!

Don't have a panini maker? You really don't need one to make this delicious Grilled Insalata Caprese . Check out how easy it is to make this delicious caprese sandwich without the panini maker and it taste over the top delicious with all the melted cheese.

You really only need a heavy grated pan with a heavy dish to press on top to make a panini no need for expensive makers! Check out the recipe and stroll down to see how I did this!

Southwest Potato Salad for 4th of July

When the summer heat kicks up this is perfect to serve. Healthier and no mayonnaise to worry about. Lime juice and olive oil are the healthy version to this great Southwest style salad and you won't have to worry about making everything separately!

Avocado Mozzarella Insalata Caprese

An addictive easy appetizer you and your guests will love !







2 large roma or vine ripe tomatoes (rinsed) cleaned and diced
2 avocados (rinsed) cleaned and diced
2 cloves of garlic minced fine
Optional: calamata olives sliced or wrinkled black Italian olives
8 oz fresh mozzarella ball or already sliced mozzarella cheese rounds
Sauce:
1 cup blue cheese dressing or light sour cream (see below for recipe)
1 tablespoon honey
2 teaspoons white balsamic vinegar
Sprigs of fresh Italian Parsley or Basil
1/4 teaspoon pepper
Mix the blue cheese with honey and vinegar set aside.
In the meantime:
Dice tomatoes . Clean avocado and dice, plus remove seed and peel. Cut mozzarella in rounds or you can buy it already sliced, mine wasn't pre sliced. Arrange slices on serving platter, mix the diced tomatoes, avocado, garlic and olives and place on top of the cheese slices. Sprinkle with pepper.  Drizzle with sauce. Garnish with  fresh basil or parsley.





Fabulous Homemade Blue Cheese Dressing
1 cup (8 ounces) Hellmann's mayonnaise
1/2 cup (4 ounces) sour cream
2 tablespoons cold water
1 1/2 teaspoons Worcestershire sauce
1/8 teaspoon salt
1/4 teaspoon finely ground black pepper
7 ounces best quality blue cheese, crumbled 

Mix all together and refrigerate for at least 6 hours before serving.
