This has all the taste of a great sandwich of these greens with homemade sausage, cheeses, garlic and extra virgin olive oil flavors. Of course you can leave the meat out if your vegetarian, not a problem at all, still perfectly delicious!
Of course you can add whatever you like to a sausage roll. We love broccoli rabe. It's tender part of the broccoli family. I boil it first only to get any dirt particles out. That's how mom did it. Then I saute it in a pan with olive oil and chopped garlic.
Cool it and add that to the cooked sausage.
This makes a delicious sandwich all in one rolled up glorious dough. You can make a whole meal out of this. Add a antipasto and some good Chianti and you're good to go.

Italian Broccoli Rabe Sausage Roll
instructions:
1 fresh dough rolled out 12 x 8 around 1/4 inch thick
1 bunch of broccoli rabe washed and stems cut, (boil first for 1/2 hour drain and then sauteed in garlic and 3 tablespoons of olive oil) cooled
4 links of loose sausage sliced and sauteed
2 teaspoons additional minced garlic
2 cups mozzarella shredded
4 tablespoons grating cheese
extra virgin olive oil
optional: 2 tablespoons marsala wine and 1/4 cup sliced mushrooms
In non stick pan add 4 tablespoons of extra virgin olive oil, add sausage, saute for 4 minutes, drain sausage oil out add the garlic for 1 minute and stir together. In the same pan, add 2 tablespoon of Marsala wine if using and mushrooms, stir in cooked broccoli rabe, mix everything together
Stretch out dough with floured hands, rest for around two minutes to a 12 x 8 x 1/4 inch rectangle. Evenly spread on the dough broccoli rabe mixture, add mozzarella and grating cheese on top. Roll up like a jelly roll tight, pinching both ends together to seal. Place on oiled sheet of foil with 1 tablespoon of olive oil, then onto a cookie sheet and bake on a 400 degree oven till browned around 40 minutes.

ReplyDeleteHey Claudia, I'm finally getting back after that traveling wedding weekend! I'm making stromboli tomorrow night. I have some greens and sausage in the freezer, will be trying this out, it sounds great.
ReplyDeleteThe only real difference between a calzone and a stromboli is that one is folded over into a big pocket, and the other is rolled, so it really doesn't matter what you choose to call it- especially when it's filled with a great flavor combination like Broccoli Rabe and Sausage.
