These Sour Cream Coffee Cake Mix Cupcakes are moist with a light texture and taste like you made them from scratch and the best part is they can be baked in any pan or super easily!


I am a big fan of Drakes Coffee Cakes and these are pretty much a copycat in flavor, except for the addition of the nuts on top.


These little bite-size cupcakes are perfect for snacking on and a quick dessert at any time of the day.


We like the addition of nuts on top for the extra crunch and flavors but you can leave them off if you're not a fan.


Doctored cake mix recipes are super easy and they really can transform quickly into a fabulous dessert.


This basic batter is great with the addition of fresh fruit toppings baked in and I will give you several suggestions below.

Easy Coffee Cake Using a Mix



Seriously what can be easier than a doctored cake mix? Well for me nothing.


This coffee cake is full-proof, easy, moist, over-the-top flavorful, smells heavenly baking and can be done in bars, cupcakes, a bundt pan, or cake squares a total win-win!


If you want a coffee cake that is bursting with flavor and gets rave reviews at whatever function, party, or even that backyard barbecue you make it for, this is it!




Ingredients You Will Need To Make Sour Cream Coffee Cake Mix Cupcakes

  • yellow cake mix (you can also use white, lemon or spice mix)
  • sour cream
  • water
  • eggs
  • Optional Topping or Filling
  • chopped walnuts or pecans (use pumpkin or sunflower seeds if you have nut allergies)
  • sugar
  • ground cinnamon
  • flour
  • butter
  • For Other Optional Topping Additions: chopped fruits of choice, blueberries, apples, peaches, cherries, raspberries, proceed the same by topping each cupcake with fruits then sprinkling with cinnamon, nuts, and sugar mixture.

Tips


  • Only use real sour cream, not sour milk
  • Bake until the middles are set not browned use a toothpick method
  • If using cake pans heavily grease or oil spray pay
  • Always preheat the oven
  • Do not overbeat the cake mix and ingredients
  • Use super moist mix cake mixes for the best results
  • You can substitute yellow with lemon, white or spice cake mix
  • Substitute pumpkin seeds or sunflower seeds for nuts if you have allergies of any kind to nuts 
  • Use an ice cream scoop for even-sized cupcakes

Note: Be sure to line the tins or heavily grease them as well as any other pans using
Cupcake Tins (this recipe makes 16 cupcakes)
8 or 9 inches round, square or disposable pans ( this size pan requires 2 pans)
13 x 9 sheet pan (you will need 1 pan)

Topping Changes Before Baking:

This basic sour cream batter is adaptable:


  • Chocolate Chips or chopped candy bars
  • Peanut Butter Chips, white chocolate
  • Peanut Butter and Jelly
  • Apples chopped
  • Peaches chopped
  • Nuts of any kind (macadamia, pistachios, almonds, walnuts, pecans, hazelnuts)
  • Nutella
  • Berries of any kinds
  • Lemon zest or orange
  • Dried fruits ( cranberries, raisins, etc)
  • Coconut
  • Chopped maraschino cherries
  • Drizzled with cream cheese frosting


Note: on some of these you can still use the cinnamon and sugar mixture or do another combination IE lemon zest, almonds, and coconut, chocolate chips and coconut, etc.

Sour Cream Coffee Cake Mix Cupcakes

This recipe is made with a cake mix with a few simple added ingredients to taste just like a homemade scratch coffee cake. The cake is loaded with cinnamon and sugar topping and walnuts. This cake very moist and light because of the added sour cream to the mix.

ingredients:

  • 1  package yellow cake mix
  • 1 cup sour cream
  • 1 cup of water
  • 3  large eggs
  • Optional: 2 teaspoons cinnamon
  • Topping or Filling Suggestions:
  • 1 cup coarsely chopped walnuts or pecans (use pumpkin or sunflower seeds if you have nut allergies)
  • 1 3/4 cup cake flour or regular flour
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 8 tablespoons softened butter
  • 2 teaspoons ground cinnamon
  • For Other Optional Topping Additions: 1 cup chopped fruits of choice, blueberries, apples, peaches, cherries, raspberries, proceed the same by topping each cupcake with fruits then sprinkling with cinnamon, nuts, and sugar mixture.

How to cook Sour Cream Coffee Cake Mix Cupcakes

  1. Preheat the oven to 350 degrees.
  2. This makes either 16 cupcakes, 2- 8-inch cakes, or 1 - 13 x 9 pan or makes 12 cupcakes and 1 - 8-inch cake.
  3. Prepare the cupcake tins or the pans you are using with paper liners and/or grease the pans that you are using.
  4. For the Topping:
  5. In a medium bowl, combine flour, (nuts or seeds), sugar, butter, and cinnamon; mix well and set aside.
  6. For the Batter:
  7. In a large bowl using an electric mixer beat the cake mix with sour cream, water, and eggs for 3 minutes.
  8. The batter will be very thick, fold in the cinnamon if used.
  9. Line your cupcake tin paper liners 2/3 full ( I use a medium-size ice cream scoop to spoon into the paper liners).
  10. Sprinkle each cupcake with the optional cinnamon and nut topping mix or any of the fruit suggestions.
  11. Bake cupcakes at 350 degrees for 15 to 20 minutes and 25 to 30 for larger cakes using the toothpick method in the center to make sure it comes out clean these are completed with cooking,
  12. The cake or cupcakes can be put in the freezer for up to 3 months.
