Easy Pumpkin Spice Cheese Pie
Wednesday, October 12, 2011
1 cup lorna doones crushed fine or graham crackers crumbs
1/4 cup finely chopped pecans
1/2 cup (1 stick) butter (4 tablespoons melted, 4 tablespoons softened)
1-1/4 cups pumpkin purée
2 (8-ounce) packages cream cheese, softened
1 teaspoon vanilla extract
1/4 teaspoon allspice
1/2 teaspoon cinnamon
pinch of nutmeg
1/4 teaspoon salt
3/4 cup powdered sugar, sifted
Preheat oven to 400°F. .
In a medium bowl, combine cookies, pecans or graham cracker crumbs with melted butter. Press mixture into bottom of a pie plate. Bake until golden brown and toasted, 5 minutes, cool completely.
In a large bowl, beat pumpkin purée, remaining softened butter, cream cheese, vanilla, spices and salt using a flat bar in a heavy duty electric mixer, until smooth. Add the sugar 1/4 cup at a time. Continue beating until smooth and creamy. Using a spatula, pour filling mixture spreading it out evenly over the crust. Cover and chill until set, about 6 hours, or overnight. Sprinkle with cinnamon and sugar as a garnish.

I never made a pumpkin pie but I'm very tempted by the idea. I like yours very much, so spicy and creamy. Bye bye, have a great day
ReplyDeleteWow, does that ever sound good! I love the pumpkin pie spice blend. Except I didn't see cloves in the ingredient list.
ReplyDeleteI just baked a pumpkin so I have fresh puree. This is a husband pleasing recipe. I'll be making it this weekend!
ReplyDeleteMy kids aren't big fans of pumpkin pie, but I could get them to eat it as a cheesecake. This sounds like a winner to me.
ReplyDeleteThe cheese pie looks mouthwatering!
ReplyDeleteThat's coming to my table, Claudia. Creamy pumpkin at its autumn loveliest.
ReplyDeleteoh..my..gosh that looks soo incredibly delicious! I can't get enough of these pumpkin recipes. Absolutely wonderful post Claudia. Thanks for sharing, have a good one! =]
ReplyDeleteI like this cheesecake mainly because there is a good ratio of cream cheese to pumpkin, which means that the pumpkin is not over powering. Also the extra bonus is it is no bake, just chill and eat. Well done Claudia!
ReplyDeleteClaudia, one of my all time favorite desserts is pumpkin pie. I also love cheesecake. So this will be made... and SOON! Sounds sooo good! Thanks Claudia
ReplyDeleteMmmm this looks good. I can taste it by just looking at your photo.
ReplyDeleteFantastic, Claudia! I would pick this over a classic pumpkin pie:)
ReplyDeleteYour cheesy pumpkin pie looks incredible Claudia! A nice twist on pumpkin pie.
ReplyDeleteHi Claudia, You have a lovely recipe here that comes together quickly. Believe it or not, I like not having to turn on the oven sometimes!
ReplyDeleteOh, Claudia - I'm certain I could eat at least four pieces of this pie.
ReplyDeleteThat looks amazing! Claudia, I wish you were my neighbor... I'd be over for dinner and dessert all of the time!! :))
ReplyDeleteI was just thinking about making this pumpkin pie jello pudding cheese cake thing for Thanksgiving...but I think I'll try your recipe instead. =) I have some news about writing!!! I'll email you tomorrow =)

I never thought to use Lorna Doone's for a crust! Great idea!

You make me miss Autumn so badly! Wonderful pie! Buzzed :)

ReplyDeletewaw!! Looks really good.
ReplyDeleteAnything easy esp for desserts just this one is for me, looks yummy.
ReplyDeleteYum! This sounds great and I luuuurve the Lorna Doone crust because I just adore Lorna Doones (especially the 100-cal pack).
ReplyDeleteBelieve it or not, I was baking at 4 this morning with squash and pumpkin spices. The cookies turned out fortunately very tasty, however, terribly ugly. Serves me right for being crazy to bake so early!
ReplyDeleteNext time, I may just have to make your cheesepie instead ;o)it surely would have looked better than my cookies.
Have a great weekend my dear and bless you for all your dedication in the kitchen ;o)
Flavourful wishes,
Claudia
Looks great and I love the Lorna Doone idea.
ReplyDeleteI reckon you replaced clove with allspice. This will be a great flavour I'm sure.
Clove is my least used spice. Use for sporadic baking and in curries. Got a big jar of cloves years ago, still have almost half left.
Thank You for this post
Yum - my kind of pie! Have a great weekend, Claudia.
ReplyDeleteHmmm...mm...this sounds delicious. I want a slice too.
ReplyDeleteHope you're going to have a fabulous weekend, dear.

That simply looks amazing. Never had pumpkin in a cheesecake/pie scenario!
ReplyDeleteLove the pumpkin and cream cheese combo! Hubby bought me a cheese cake for my birthday, no pumpkin :(
ReplyDeleteFinally, I got to track back to the
ReplyDeletecream cheese-pumpkin pie. Still drooling here...not fair!
At the time I wanted to leave a message when you first posted this, my computer froze up...no wonder!
I was staring it this yummy pie so much, my computer "gave out"...ha, ha, it really did freeze up!
