Berry French Toast


2 tablespoons part-skim ricotta cheese
2 slices whole-grain bread
1 teaspoon honey
1 tablespoon sliced almonds
1/2 teaspoons ground cinnamon
1 egg
1 tablespoon 1 percent milk
a handful of fresh berries or any fruits you prefer (strawberry, blueberry, blackberry)


Directions
Spread the ricotta on 1 bread slice.

Drizzle the honey over the cheese, top with the sliced almonds, and sprinkle lightly with cinnamon.

Top with the remaining bread to form a sandwich.

Coat a nonstick griddle or skillet with cooking spray and heat over medium heat. Whisk the egg, milk, and any remaining cinnamon in a shallow bowl.

Dip the sandwich into the egg to coat both sides. Place in the pan and cook until the bread is lightly browned on both sides. Serve with the berries.

  2. Yum! This is one fantastic looking breakfast. With fruit, wine, bread and cheese I am not sure if it is breakfast or a romantic picnic. :-)

  4. I do have a weakness for ricotta and fruit! You did a great job with those two here, the toasted sandwich is an awesome creation. This definitely would be impressive to serve at a brunch get together! I am so craving this for breakfast now...

  7. awesome idea and the combination of flavors sounds unbelievable... I have used this brand before in making pies, now am gonna do it with sauces, so much easier than from scratch...
