Irish Potatoes Recipe

These Irish Potatoes are a simple boiled then baked stuffed potato we usually enjoy on St. Patrick's Day because it's loaded with green onion and parsley and "Green" for the Luck of the Irish food day.

The potatoes are creamy inside and smashed with a delicious filling and the jackets are nice and crispy so you can eat the entire potato.

Although St. Patrick's Day isn't a National holiday we like to partake in the festive foods and enjoy the day with a bountiful assortment of Irish American foods.

Our recipe will go great with any meal but we particularly enjoy them with Corned Beef slow-cooked in Guinness and some delicious Reuben Brats or maybe you would like to try our Colcannan Mashed Potatoes.

One of our favorite desserts after a big meal is our fluffy Pistachio Ambrosia or top off the night with our Homemade Irish Cream Liqueur.

Irish twice baked potatoes


Easiest Irish Potato

  1. cook the potatoes first
  2. split them lengthwise
  3. scoop them out and season the potatoes
  4. bake the jackets until crispy
  5. fill them back up
  6. broil the tops after garnishing see below recipe card for measurements

 Onion and Parsley Substitutions 

  • chopped steamed asparagus
  • chopped fresh spinach
  • garlic scapes
  • green chopped steamed cabbage
  • another green herbs you prefer IE: basil, dill, etc.



Tips and Suggestions for Making Irish Potatoes

  • Scrub and wash the potatoes first
  • Always pierce the potatoes to keep them from exploding if  you're microwaving
  • Potatoes with a green tint are old, and they are past their prime. You should pick potatoes that are even in size and those that have that consistent brown skin
  • Add whatever you like to the potato mixture for the jackets
  • Skin will not get crispy, for crispy skins bake the skins after scooping out the filling before filling with potato mixture brushed with olive oil 
  • There are several toppings for baked potatoes and become a whole meal see our topping suggestions below and you can set up a serving topping bar for hosting a party 
  • For faster cooking methods instead of boiling them, use the microwave
  • Note: If you prefer crispy jackets, spray with cooking oil and place in the oven for 11 minutes at 400 degrees or longer for crispy skins. fill add toppings, then bake

  6. leftover boneless buffalo chicken tenders chopped with blue cheese and shredded cheddar cheese

  8. BLT dip topping or Coleslaw topping
  9. chicken parmesan bites
  10. Philadelphia cheese steak filling
  11. lemon chicken
  12. Guinness Corned Beef
  13. shredded Dubliner cheese or Beer cheese

Baked Potato Additions

  • add bacon bits or cooked crispy bacon crumbled
  • add cream cheese to the potatoes
  • add heavy cream or half-and-half
  • add granulated garlic powder
  • add chopped dill or assorted dry herbs
  • season with salt, pepper, and hot sauce for a spicy filling
  • add sour cream
  • add butter
  • add all fresh herbs

Irish Potatoes Recipe

Irish potatoes are a perfect side dish with any meal, we particularly like to make these for Saint Patrick's Day with lots of green onion and parsley on top.

Ingredients

  • 4 to 6 medium-sized potatoes of any color yellow, (red or white) well scrubbed
  • 5 green onions or garlic scapes chopped (save a few for garnishing)
  • 1/2 cup flat-leaf Italian parsley, chopped (saving half for garnishing)
  • 1/4 cup extra virgin olive oil
  • 4 tablespoons milk, half and half or heavy cream
  • salt and pepper to taste
  • Optional: 1 teaspoon of breadcrumbs for topping each potato
  • See notes for additions, substitutions, and toppings

Instructions

  1. Scrub and wash the potatoes.
  2. I always pre-boil them in salt water whole (or you can microwave them for around 9 minutes) for 12 to 15 minutes then drain.
  3. Slice the potatoes when cool in half and place the jackets on a baking sheet.
  4. Scoop out the potatoes add to a boil and mix with half the parsley and the rest of the ingredients.
  5. Preheat the oven to 400 degrees and bake the jackets brushed or sprayed with cooking oil until they crisp up how you prefer them.
  6. Usually around 10 to 14 minutes depending on how crispy you like the skins.
  7. Mix the rest of the ingredients (using just half the parsley)i with the potatoes in a bowl and slightly mash together.
  8. Fill the jackets and place them on a baking sheet.
  9. Sprinkle the top of each potato with breadcrumbs, and parsley, and broil the tops until the breadcrumbs start to get golden brown.
