Avocado Black Bean and Corn Salad

Avocado, Black Bean, and Corn Salad is a gluten-free vegan recipe that is bursting with fresh and colorful flavors!

This is a delicious side dish that goes great at any picnic or summer meal.

It keeps great prepared even the day before and adds the dressing just before serving.

This is perfect for all in one bowl side dish for your family picnic, events and holiday get together's.

You may also like to try our favorite Bruschetta with Avocado and Chicken on top it's so good!

Just remember to keep it healthy use dressing sparingly we do try to serve it seperate and just dip your fork into it lightly to keep those calories down.

Easy to prepare



You can either make the beans fresh or canned but rinse all that salt off first.


I usually put my dried package of black beans in the slow cooker overnight and in the morning they are perfectly cooked.


Remember this recipe is just a guideline on quantities. Add more or less to the group of folks you entertaining.


With a large crowd, I usually double this recipe and keep half in the refrigerator undressed and add it to the bowl when it's almost gone.


It keeps it fresh like I just made it, instead of mushy vegetables from the dressing being on it too long.

Other Additions:

  1. dried cranberries
  2. raisins, dates, chopped figs
  3. pecans, walnuts, cashews, pine nuts, almonds, macadamia nuts, pistachios, sunflower seeds pumpkin seeds 
  4. bean sprouts 
  5. fresh pear slices blueberries, raspberries apples chopped, mandarin oranges, mango diced, papaya chunks, grapes, peaches, watermelon, cantaloupe,
  6.  green, black, pimento olives, crinkled Italian black olives
  7. jalapenos or any kind of peppers diced IE:  bell diced peppers, hot peppers pepperoncini
  8. tuna, salmon canned drained
  9. boiled chicken or leftover boneless meats
  10. broil fish like shrimp or any kind of hearty
  11. garbanzo beans, white beans, red bean
  12. green beans, french beans
  13. grilled vegetables IE asparagus, broccoli, cauliflower, beets, artichoke hearts, or hearts of palm
  14. feta cheese, blue cheese, long strands of parmesan, asiago, goat cheese Swiss cheese
  15. cooked brown rice, cooked orzo, quinoa, millet, wheat berries 
  16. shredded fresh zucchini, yellow squash
  17. grated cooked sweet potatoes
  18. celery, julienned carrots, pickled jarred vegetables, radishes




Set up a salad bar station for picky eaters!



As I said some guests can't eat some of the vegetables in the salad, or just don't like them.


I get a large platter and choose quite a few from my suggestions above and let them build their own, it's great when hosting a party.


I also will have other dressings handy Homemade blue cheese, GreekThousand Island, Ranch  and Parmesan Creamy Dressing.


We have many picky eaters along with family members who can't digest some of the skins on the vegetables.

Lucky for me, everyone loves avocados. Salads are always on our dinner table.


I am a big black bean fan and this is kind of like a salsa salad.


Adding any of the other suggestions above to the avocado with black bean and corn salad is an even bigger bonus for everyone;


Just remember you can mix it all together, I chose to keep it all separated to please everyone.


It gives me the freedom of having everything we love in one big bowl easy to eat, especially the corn!


The lime dressing is the perfect combination for flavors in any of the California style, Southwestern, or Tex Mex salads.


This Avocado and Black Bean Corn Salad are almost like having an avocado black bean salsa!


Avocado Black Bean and Corn Salad

Avocado Black Bean and Corn Salad

Corn avocado salad is a great addition to any picnic side dish. It's a fresh salad with a lime dressing!

Ingredients

  • 3 Avocados cleaned and cubed
  • 2 cups or more of Black beans (either freshly made or canned drained)
  • 3 Boiled fresh ears of corn cut off the cob
  • 3 cups of grape tomatoes sliced in half or plum tomatoes chopped
  • 2 cucumbers seeded and cubed
  • Optional 1 cup of any or each: other beans like chickpeas or cannellini, chopped olives, sliced fresh mushrooms, chopped green chilies or bell peppers, chopped red onion
  • Dressing:
  • 1/3 cup freshly squeezed lime juice
  • extra virgin olive oil
  • salt, and pepper to taste
  • chopped fresh Italian parsley or cilantro
  • 2 teaspoons finely minced garlic
  • 1 teaspoon chili powder
  • 1 teaspoon honey

Instructions

  1. Clean chop and cube the salad ingredients. Add to your bowl. Store in refrigerator until ready to serve.
  2. Dressing:
  3. In a small deep bowl whisk together all the dressing ingredients and set aside. Pour over salad and serve immediately.
  4. Note: use firmer avocados, not mushy ones they will hold up better in your salad.
  5. Do not add the dressing until the salad is ready to eat.
  6. Note: Lime juice softens the vegetables and they won't stay crispy.
