Valentine's Day is one of those days you just may want to make something a little special, red and from the heart and these Strawberry Muffins are just perfect for that special someone.

Of course, you certainly don't need a holiday to make these scrumptious muffins they're great all year long and especially during strawberry season.

Besides being colorful these tender muffins are bursting with berries, tender in texture, and perfect slathered with melted butter with a cup of coffee to start your day.

These are super easy to make with just a few steps and the smell will make your mouth water while they bake.

Often we even use a mini muffin pan so we can have them on the go for those busy mornings when you have no time to cook because these taste great warm or cold!

Not only are these simple to make but since it's a basic recipe you can use any fruit you like especially if you're not big on strawberries, try some whole red raspberries, chopped cherries or even dried cranberries.

Easy Steps

  1. Prepare a muffin tin with liners and preheat the oven to 375 degrees
  2. Sift the flour, salt, baking powder, and baking soda place in a bowl
  3. Melt butter and cool, beat eggs in a small cup set aside with milk
  4. Make a well, add the wet ingredients to dry
  5. Add the sugar to the chopped strawberry and fold into the mixture just until combined do not overwork the batter.

  • whole milk
  • baking powder
  • salt
  • egg
  • strawberries chopped
  • unsalted melted butter
  • cinnamon
  • baking soda

Other Additions or Substitutions

  1. chopped or diced fruits strawberry, blueberries, raspberries, peaches, cherries, pear, pineapple, mango, fig
  2. dried fruits,
  3. nuts
  4. coconut
  5. mini chocolate chips

Tips

  1. for a tender pastry do not overwork the batter
  2. for best results in flavor use whole milk
  3. always sift the dry ingredients
  4. any extracts can be used vanilla, orange, lemon, maple, almond anisette, or whatever else you love
  5. do not over bake
  6. spread with butter jam or jelly while warm
  7. these are perfect served with tea or another hot beverage you prefer

Perfect Muffins Every Time Treats


Strawberry season is the best time to make these since you can get the sweetest berries and plentiful and it seems we always have a few leftovers we want to use up in a hurry.


If you love muffins, you're in for a real treat, these are amazing in flavor, and you can even add a streusel topping if you love a rich cinnamon topping, I included them as an option.


Either way, it's an all-year-round great muffin but we do save these for our favorite someone special on Valentine's Day every year.

Valentine's Day Strawberry Muffins

Breakfast is served for Valentine's Day with a pretty strawberry delicious muffin slathered in jam or butter, it's a great way to start the day

Ingredients

  • 3 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 1/2 tablespoons ground cinnamon
  • 1 1/4 cups milk
  • 2 extra-large eggs, lightly beaten
  • 2 sticks unsalted butter, melted (1 cup)
  • 2 cups fresh strawberries chopped
  • 1 1/2 cups sugar
  • Note: both the berries and sugar go in at the end so please read the instructions
  • Option: cinnamon and sugar to sprinkle on top

Instructions

  1. Prepare a muffin tin with paper liners
  2. Preheat the oven to 375 degrees.
  3. In a large bowl, sift the flour, baking powder, baking soda, salt, and cinnamon together.
  4. Mix to combine.
  5. In a clean bowl mix the milk, eggs, and melted butter.
  6. In the flour mixture make a well in the center pour the wet mixture into the well, and stir until just combined. Don't overmix the matter.
  7. Fold in the strawberries and sugar and stir gently to combine.
  8. Fill the muffin cups and bake for 25 minutes or until the centers spring back to the touch,
  9. Optional: Streusel Topping: 6 tablespoons butter softened 1 1/4 cup all-purpose flour 1/2 cup light brown sugar 1/3 cup sugar 1 teaspoon ground cinnamon
