This is a delicious almond, cherry cookie loaded with pistachios. These taste like the famous ice cream Italian Spumoni. The cookies look festive around the holiday season with the perfect colors into a fabulous favorite biscotti.

Ingredients

  • 1 cup butter
  • 1 1/4 cup sugar
  • 2 1/2 teaspoons baking powder
  • 2 eggs
  • 1 egg yolk
  • 1 tablespoon orange peel
  • 3 cups flour
  • 1/2 cup maraschino red cherries
  • 1/2 cup maraschino green cherries
  • 1 cup toasted coarsely chopped pistachio nuts, pine nuts, or almonds, save some whole ones for the tops.
  • 2 1/2 tablespoons almond extract
  • Topping:
  • 1 egg white beaten with 1 tablespoon water and a little flavoring used above
  • more sugar
  • Optional additions: miniature chocolate chips, white chocolate chips, any kinds of nuts, colorful sprinkles, tinted sliced almonds, dried cranberries, food coloring to tint the dough pink or green or make tinted white chocolate for dipping the ends with

Instructions

  1. Preheat oven to 375 degrees.
  2. Line a cookie sheet with parchment paper.
  3. In an electric mixer bowl add butter, 1 cup sugar, and baking powder.
  4. Beat in eggs, egg yolk, and orange, cherries, nuts, and flavoring (add food coloring if using).
  5. Spread out each loaf on the parchment paper-lined cookie sheet (they will smooth out as they cook).
  6. Bake around 10 minutes or till the top looks set and not sticky, take out and lightly but quickly brush with egg white and a little sprinkle of sugar.
  7.  Return to oven.
  8. Continue to bake at 375 degrees until browned on top. ( This keeps the sugar still shiny) around 20 minutes.
  9. Let cool on the cookie sheet until completely cool. 
  10. Cut into 1-inch slices or thinner if you like. 
  11. Place slices, onto cookie sheets and toast at 325 degrees flipping to brown on each side. 
  12. When cool you can dip the ends in pink or green-tinted white chocolate for a festive look and roll in more chopped pistachios or other nuts.
