  1. Bake on parchment paper or a Silpat mat
  2. Always preheat the oven
  3. Use softened butter never margarine
  4. use a different flavor of instant pudding to make pistachio, french vanilla, chocolate and other flavors just by adding coordinating nuts, coconut or chocolate chips to mix and match flavors
  5. Additions like chocolate chunks, candy bars, coconut, or sprinkles can be added
  6. Try a different extract, coconut, anisette, orange, almond, rum all great flavor additions
  7. Store these in an airtight container with wax paper between the cookies for freshness
  8. Always cream the two sugars with butter for at least 3 to 4 minutes

Chocolate Chip Pudding Cookies

A soft chocolate chip cookie made with instant pudding in the mix. The texture is more cake-like and delicious. Not a crunchy cookie.

Ingredients

  • 1 cup butter softened to room temperature
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 (3.4 oz) package of instant vanilla pudding mix ( you can use any flavor) see notes below for suggestions
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 -1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet, milk, or dark chocolate chips
  • Mix-in suggestions: peanut butter chip, white chocolate chips, candy bars cut into bite-sized pieces, coconut, raisins, chopped dates, dried fruits, pistachios, macadamia nuts, or another nut you prefer, colorful sprinkles, toffee bits, chopped cookies of any kind

Instructions

  1. Preheat the oven to 350 degrees and line two baking sheets with parchment paper.
  2. In a large bowl cream the butter and sugars together for 3 minutes.
  3. Beat in the pudding dry mix then the eggs and vanilla.
  4. Place the flour, baking soda and salt in another bowl and whisk together.
  5. Combine the two until just evenly blended then fold in the chocolate chips
  6. This cookie is soft and will be a soft dough.
  7. Using a cookie scoop or tablespoon, drop the cookies onto the prepared baking sheet in round mounds.
  8. Bake for around 10 minutes or until the edges start to brown.
  9. Cool before removing from the pan.
  10. Note: do not use hot cookie sheets to bake another batch, the sheet must be cooled first.
  11. Store in airtight containers for up to 3 days or freeze them.
