Half Moon Chocolate Cake Mix Cookies

For all of you that know me and read my blog, I am from Upstate Utica, N.Y. We have some of the best bakeries in the world there, at least to me.

These are a semi-homemade Halfmoon and if you have followed me in the past know, I always make mine from scratch.

If you are in a huge hurry and want a quick fix and aren't a baker, then this is the recipe for you using any flavored cake mix.

Today we are making white half-moon cookies and chocolate half-moon cookies that taste practically homemade.

You can enjoy these in no time at all without running out of time to make special treats like this one.

This recipe will come in handy for all us working folks and moms who just run out of time with making things for school functions, benefits, large parties, and just because they're so good. Did I mention you use a cake mix?

Oh yes and you can make all kinds of flavored cake mixes and also frost them to whatever theme is going on. Fast to be a quick fix and pretty darn good!

Also, use coordinating tinted frostings for the cake mixes you choose to use.

I have to say these are definitely pretty darn good and the kids loved them!

Cake Mix Recipes are fun, we love creating quick recipes from doctored cake mixes like this Dark Fudge Chocolate Cake or Carrot Cake that tastes like it was baked from scratch.

I love the spice cake with an orange-tinted cream cheese frosting and a little sprinkle of cinnamon and sugar on top, the perfect fall flavors!

Cake Mix Half Moon Cookies



You really can use any flavored mix, chocolate seems to be the favorite here.


Whenever we are in a hurry these are a quick fix for a bakery-style half-moon cookie urge.


Quick and easy to make.

With just some tinted frostings, candies and the basic round moons, you can create anything you like.


Fun for any functions, birthday, holidays and so much more.


Easier than cupcakes too!


Drop them on a cookie sheet, bake, cool, frost, and decorate.

Other Ideas and Tips

  1. make one large on a small pizza pan and decorate
  2. use an ice cream scoop for even-sized  cookies
  3. homemade frosting is best but canned can be substituted 
  4. mix by hand not with a mixer
  5. do not overbake cookies should be set in the center not browned
  6. any cake mixes can be used(white cake is more like bakery-style in color for vanilla half-moons)
  7. color coordinate the frosting with sprinkles for holiday themes (IE orange and black for Halloween, Red, and Green for Christmas, Pastels for Easter, Red White and Blue for Patriotic

  • chocolate cake mix ( use any flavor you like using this recipe IE white, yellow, spice, butter pecan, lemon, etc)
  • Note: do not use a mix with pudding in it.

Half Moon Chocolate Cake Mix Cookies

If you are familiar with half-moons or black and whites, these can be made any cake flavor starting with a cake mix and super simple.

Ingredients

  • For all chocolate half-moons:
  • 1 - 15.25 oz box size chocolate cake mix ( use any flavor you like using this recipe IE white, yellow, spice, butter pecan, lemon, etc)
  • Note: do not use a mix with pudding in it.
  • 1/2 cup oil ( I used vegetable)
  • 1/4 cup flour
  • 1/2 cup whole milk
  • 1 tablespoon unsweetened cocoa powder ( I use special dark)
  • 2 eggs
  • 1 can white frosting
  • 1 can chocolate frosting ( I prefer homemade)
  • food coloring
  • sprinkles
  • nuts
  • decorating candies to match the holiday theme or colored sugars
  • for dark chocolate, moons add 1 tablespoon of special dark cocoa to the mix
  • Note: for 18-ounce cake mixes use 2/3 cup oil, 2/3 cup milk, and 2 eggs

Instructions

  1. Preheat oven to 350.
  2. Line two cookie sheets with parchment paper.
  3. Combine all ingredients in a bowl mix until well blended.
  4. For even size cookies use an ice cream scoop, then flatten down slightly.
  5. Bake for 8 to 10 minutes depending on size, the middle should be set not wet looking.
  6. Cool completely cake side down mounded side up. 
  7. Frost flat sides, half white half chocolate.
  8. Note: tinted frosting is using 1 drop red food coloring 1 drop yellow to make orange color.
