The filling is so versatile and you can change it up in so many ways tailored to how your family likes it. The peppers give this just a the right Italian flavors along with arugula and prosciutto. Stuffed Chicken Breasts



This stuffed chicken is not only impressive it's an all in one meal.


If you love all the ingredients and make this recipe, you have your meats, vegetables and dinner all in one pan.


The sauce it makes while cooking is delicious and usually enough to even put over a bed of angel hair!

Creative Stuffing Options



The cream cheese base is perfect to hold whatever you like inside.


Whether you like spinach or arugula or even asparagus inside, this chicken just is so versatile to whatever you want to put inside.


Sliced tomatoes and mozzarella are another great combination using a basil pesto with cream cheese inside.


I still wrap mine in bacon at the end and bread crumb topping.

Bacon or Pancetta Wrapped



My family loves any of our chicken, steaks or smoked meats wrapped in bacon.


I use pancetta which is an Italian style bacon.


You can use regular bacon and add strips to the top or wrap the entire stuffed chicken breast with it.


It bakes up nice and crispy and flavors the outside of the chicken perfectly.

Tips and Bread Crumbs



The crunchy bread topping with melted cheese is the perfect garnish to these stuffed chicken breast.


I like to add around 3 tablespoons of grated cheese to my bread crumbs and some granulated garlic evenly over the whole tray before baking.


Top with some shredded mozzarella cheese just before it's done cooking to melt the cheese.


Make sure you grease your baking pan lightly with an oil cooking spray.


Don't over cook them, they cook quickly around 35 minutes.


After you have thinly sliced the chicken and you can prepare the chicken two different ways.


Leave a pocket and stuff them or slice them thin and roll them up, always seam side down while baking.

Change it Up!



Substitute any kind of greens or meats you like.


You can add a basil pesto on top of the cream cheese and make these all vegetarian.


You can also use pepperoni, hot capicola or regular ham if you want to change the filling up

The Wine



I always say, taste the wine first, if it's not something you would like to drink and it's terribly bitter than don't use it in the recipe.


Always buy a good grade wine for your recipes, I have in the past used cheaper wines and it will ruin this recipe.


You can use any good grade white wine, my preference is to use Pinot Grigio.


If you don't want to use white wine, substitute apple juice or chicken broth in it's place.

These can be made a head a time and even taste great reheated.


Bake them and reheat them on a low oven heat till just warm.

Bursting with delicious flavor



I really love mine wrapped in the pancetta which is an Italian style bacon, but you can use regular apple wood bacon if the preferred here.


Garlic bread or bread sticks goes great with the creamy sauce this makes in the pan, we love to dip that bread in the sauce.


Another way to serve this stuffed chicken breast sauce is over pasta, don't let that great sauce go to waste!

Italian Stuffed Chicken Breast

prep time: 15 mins cook time: 35 mins total time: 50 mins
This is a delicious chicken breast stuffed Italian style with a cream cheese, prosciutto, and wrapped in pancetta or bacon. This recipe can be made with or without meat. The bacon or pancetta will give it lots of flavor. I made it both ways to show you with and without it stuffed with greens and just cream cheese or with the meats and arugula. Either way this is a big hit.

ingredients:

4 Chicken breasts boneless thinly sliced with pocket
3 Garlic cloves minced or use granulated garlic
1/2 cup whipped Cream cheese (herb flavored, regular or any spreadable cheese you like)
4 Pepperoncini peppers or more left whole of chopped
2 tablespoons fresh chopped parsley
salt, pepper to taste
pinch of red pepper flakes
1 cup Arugula or Spinach
Prosciutto thinly sliced for each piece of chicken
Italian flavored bread crumbs
olive oil
1/2 cup Pinot Grigio white wine, apple juice or chicken broth


Optional 1 : wrap outside of chicken with  Italian pancetta or bacon before baking

Optional recipe #2:  Spread with cream cheese, top with basil pesto, roll up. Top with chopped pepperoncini, grated cheese and mozzarella.

instructions:

Slice the chicken breasts in two thin pieces not cutting all the way through the bottom to form an open pocket.  

In a bowl mix 3 finely minced cloves of  garlic into cream cheese. Add parsley, salt, pepper, red pepper flakes and (or use one of the above stuffing options)  Open chicken, spread with cream cheese, add meat and greens if using. Roll up and wrap with pancetta or bacon seam side down. i Place each one with a  pepperoncini. Place each one in a greased pan.  Drizzle evenly with olive oil and sprinkle with bread crumbs. Pour wine or other liquid options, in the pan not touching the chicken. I sprinkle with granulated garlic, grated cheese and shredded mozzarella a 15 minutes before it's done just to melt the cheese. Bake on 350 degree preheated oven until the juices run clear around 35 to 40 minutes.
