Chicken Caprese is a fresh salad on top of deliciously grilled or baked chicken. This is great whenever you make a huge pot of chicken soup with lots more chicken than needed for the soup pot? Seems I always have alot of chicken left over.  Here is a great way to make a second meal with all that chicken when that happens. It's economical, easy and everyone will love it! Make a big pot of chicken soup boiling boneless thighs or breasts boneless and use the some of the boiled pieces for a second meal!

Chicken pieces cooked (like thighs or breasts) without bone, boiled, grilled, fried or baked

Slices of plum tomatoes cut thin

Slices of mozzarella whole milk cheese

Fresh basil leaves

Fresh, frozen or canned Spinach leaves or boiled escarole

Olive oil

Minced garlic

Granulated garlic

Grating cheese

Optional 2 or 3 tablespoons white wine


Place the cooked chicken on an oiled sprayed pan or on aluminum foil. Top with slices of tomatoes, some spinach then top with sliced mozzarella cheese. Sprinkle generously with grating cheese, minced garlic, salt , pepper to taste. Drizzle with olive oil and wine if using. Bake or broil just until cheese is melted and starts to brown and tomato softens.
