Ingredients
- Chocolate Cupcake Batter:
- Use your favorite cake mix to package instructions or our homemade Chocolate Cupcake recipe below:
- 1 1/2 cups flour
- 1 cup sugar
- 1/3 cup unsweetened dark cocoa
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup warm coffee
- 1 tablespoon white distilled vinegar
- 1/3 cup canola or vegetable oil
- 1 large egg, room temperature
- 2 teaspoons vanilla, almond or coffee extract
- Fluffy Frosting:
- 1/4 cup whole milk
- 2 teaspoons pure almond or vanilla extract
- 10 tablespoons butter at room temperature
- 5 cups powdered sugar
- 1/2 cup marshmallow fluff
- optional: frosting can be tinted with any food coloring you prefer or left white
- Garnish:
- jelly beans or malted colorful Easter eggs
- Easter grass with coconut see below for the directions
Instructions
- Preheat the oven to 350 degrees and line your cupcake tin with 12 paper liners.
- Cupcake Batter Instructions:
- Mix all the dry ingredients in a bowl and set it aside.
- In another clean bowl, add all the wet ingredients and blend evenly.
- Without over-mixing, blend the two bowls together (the batter will be lumpy).
- Fill cupcakes 2/3 full.
- Bake at 350 degrees for 20 minutes or until the middle springs back when touched.
- Cool completely before frosting and assembling.
- While the cupcakes are baking make the frosting and grass.
- Fluffy Frosting:
- In a large mixing bowl add the butter, and powdered sugar and beat until light around 4 to 5 minutes.
- Add the milk and vanilla.
- Add the fluff, to the sugar mixture beating until smooth and fluffy around 2 minutes.
- Colored Coconut Grass:
- Put coconut in a bowl and add a few drops of green and one drop of yellow food coloring. Then add a couple of teaspoons of water.
- Stir this up really well and add more or less coloring until the color you like is achieved to look like grass.
- Drain this in a food strainer and allow it to dry on wax paper.
