Easter Chocolate Peep Cupcakes

If you want one of the best tasting all made from scratch chocolate cupcakes, we have that and a fluffy white delicious frosting for you to make using peeps for Easter.

This recipe is really easy to make and hardly any work even for a non-baker you will love these most chocolately cupcakes.

Decorated with chicks, coconut tinted green Easter grass make the perfect centerpiece for your Easter dessert table these are so festive.

With a few jelly beans, or some malted speckled eggs, you're Easter cupcakes will be loved by everyone.

Of course you have the option to use store-bought favorite canned frosting and cake mix, but these can be a special holiday treat.

Easy Steps for making Homemade Chocolate Peep Cupcakes

  1. preheat the oven and use paper liners to a 12-cup cupcake tin and set aside
  2. make the cake from scratch or the homemade recipe below
  3. while baking make the fluffy white frosting or use canned
  4. tint coconut green for grass
  5. after baking completely cool, frost and assemble with chick, grass, and jelly beans

  • sugar
  • unsweetened dark cocoa
  • baking soda
  • salt
  • warm coffee
  • white distilled vinegar
  • canola or vegetable oil
  • egg
  • vanilla, almond, or coffee extract

Homemade cupcakes decorated for Easter with fluffy frosting, Easter coconut grass, and peeps

Ingredients

  • Chocolate Cupcake Batter:
  • Use your favorite cake mix to package instructions or our homemade Chocolate Cupcake recipe below:
  • 1 1/2 cups flour
  • 1 cup sugar
  • 1/3 cup unsweetened dark cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup warm coffee
  • 1 tablespoon white distilled vinegar
  • 1/3 cup canola or vegetable oil
  • 1 large egg, room temperature
  • 2 teaspoons vanilla, almond or coffee extract
  • Fluffy Frosting:
  • 1/4 cup whole milk
  • 2 teaspoons pure almond or vanilla extract
  • 10 tablespoons butter at room temperature
  • 5 cups powdered sugar
  • 1/2 cup marshmallow fluff
  • optional: frosting can be tinted with any food coloring you prefer or left white
  • Garnish:
  • jelly beans or malted colorful Easter eggs
  • Easter grass with coconut see below for the directions

Instructions

  1. Preheat the oven to 350 degrees and line your cupcake tin with 12 paper liners.
  2. Cupcake Batter Instructions:
  3. Mix all the dry ingredients in a bowl and set it aside.
  4. In another clean bowl, add all the wet ingredients and blend evenly.
  5. Without over-mixing, blend the two bowls together (the batter will be lumpy).
  6. Fill cupcakes 2/3 full.
  7. Bake at 350 degrees for 20 minutes or until the middle springs back when touched.
  8. Cool completely before frosting and assembling.
  9. While the cupcakes are baking make the frosting and grass.
  10. Fluffy Frosting:
  11. In a large mixing bowl add the butter, and powdered sugar and beat until light around 4 to 5 minutes.
  12. Add the milk and vanilla.
  13. Add the fluff, to the sugar mixture beating until smooth and fluffy around 2 minutes.
  14. Colored Coconut Grass:
  15. Put coconut in a bowl and add a few drops of green and one drop of yellow food coloring. Then add a couple of teaspoons of water.
  16. Stir this up really well and add more or less coloring until the color you like is achieved to look like grass.
  17. Drain this in a food strainer and allow it to dry on wax paper.
