This is one of the easiest all in one breakfast brunch or dinner you will ever make in this tasty Capicola Potato Broccoli Pie.

Often we have leftover vegetables from a previous meal and use the leftovers like this steamed broccoli for a delicious addition to a savory pie like this one.

You can make your pie crust homemade with my recipe, or use a premade crust this is very adaptable.

This pie is a little spicy as the Italian capicola is a hot spicy rimmed ham.

We really love to change it up and add roasted peppers or artichoke hearts along with the same egg filling and cheeses, it's a great combination of flavors.

Just stroll through the different vegetables and meat suggestions and make your own combination of fillings for this pie.

You can serve this as an appetizer before a big meal or this quiche-like pie is just perfect when you want a lighter meal.

My kids just love this pie and one of our other favorite combinations is loaded with crumbled cooked bacon, tomatoes, and fresh spinach leaves, it's like a BLT.

  10. sliced plum tomato,

Ingredients You Will Need


  • 9-inch deep-dish pie crust homemade or store-bought
  • eggs
  • shredded cheese blended cheddar, mozzarella, provolone
  • steamed broccoli
  • hash browns cooked or tater tots browned and crumbled
  • granulated garlic powder
  • butter
  • whole milk ( you can use 1% also for dieters)
  • 6 or more slices of capicola or other ham
  • salt, pepper, and cayenne to taste
  • optional: add around 1/2 cup chopped cooked meats of any kind


Tips


  • Cutting calories? This bakes perfectly crustless.
  • this can be made individually in a muffin pan
  • Use 2 % milk for less fat
  • You can use all egg whites if watching cholesterol
  • For meat eaters add any kind of chopped cooked meats you like
  • Topping with fresh basil and using mozzarella or provolone is the perfect Caprese quiche style 
  • Always spray the pie plate with cooking oil before adding pie crust.
  • Always preheat the oven first
  • Avoid too many additional vegetables that are water-filled or this will be soggy limit them to around 1 cup of mixed

Capicola Potato and Broccoli Pie

This is a great brunch pie with deli capicola, hash brown potatoes, broccoli, and lots of cheese baked in a flaky pastry crust.

Ingredients

  • 6 slices or more hot capicola deli meat (or use black forest ham) cut into small pieces
  • 1 cup sauteed broccoli rabe or steamed broccoli florets seasoned to taste with granulated garlic, salt, and pepper
  • 4 eggs beaten with 1 cup milk
  • 3 tablespoons melted butter
  • 1 cup cooked cubed potatoes (leftovers work great cubed (or use frozen crispy hash browns, thawed tater tots smashed up in a pinch)
  • 1 store-bought 9-inch deep-dish  pie crust or homemade pie crust
  • 1 1/2 cups of blended cheese shredded provolone, extra sharp cheddar, and mozzarella
  • Optional Additions: sliced peppers, artichoke hearts, mushroom slices, diced eggplant, shredded zucchini or sliced plum tomato, spinach, cooked escarole, crumbled bacon, Italian sausage, steamed chopped asparagus, breakfast sausages crumbled

Instructions

  1. Preheat oven to 400 degrees, then lower to 350 degrees when ready to bake this.
  2. In a medium-sized bowl beat the eggs with milk, season light with salt and pepper.
  3. Spray a pie plate with cooking oil.
  4. Line the pie plate with the pie crust, place the broccoli on the bottom, and sprinkle with 1/2 cup blended cheese.
  5. Add the hash browns on top and capicola or other ham.
  6. Drizzle the top with melted butter.
  7. Pour the egg mixture on top.
  8. Sprinkle the top with the rest of the cheese. 
  9. Bake at 350 preheated oven for 45 minutes to an hour until the top gets nicely browned.
  10. Let the pie rest for 10 minutes before cutting.
