One of our favorite frozen food we use to buy when I was in college was pot pies, quick easy in one-dish meals.
Seriously, this is super easy and to even make it faster you can use premade pie crust and frozen mixed veggies.
Whatever you have time for or want to substitute is up to you and your taste buds.

This recipe is designed to use leftover turkey from Thanksgiving or other holidays and even rotisserie leftover chicken but the best part of making a pot pie is you can use any kind of meat.
Change the gravy to beef or pork and make it with whatever you have, easy peasy meals.
Leftover Turkey Pot Pie

This is a delicious way to use up leftover Turkey or any other meat from the Holiday. Pot Pies are comforting and perfect for a new meal after that Thanksgiving turkey leftover. Here's is a great recipe.
Ingredients
- 2 cups or more chopped leftover Turkey, chicken, pork, beef lamb, or another meat you prefer cooked and boneless
- leftover, corn, peas, carrots or all three combined around a cup or use frozen mixed vegetables
- 2 potatoes cubed and boiled or microwaved
- 2 cups leftover turkey, chicken, pork gravy or use 1 can cream of chicken soup
- pie crust store-bought top and bottom crust or my recipe homemade
- 1/4 cup white wine ( I use pinot grigio
- salt, pepper to taste
- granulated garlic to sprinkle on the crust
- dot with butter
- cooking oil spray
- use at least a 3-inch casserole deep baking dish
Instructions
- Preheat oven to 400 degrees.
- Oil spray your baking dish.
- Line the bottom with the dough in a large square or deep-dish glass pan to fit store-bought pie crust, or homemade.
- Add the turkey-cooked potatoes, carrots, peas, and or corn or frozen mixed vegetables if you don't have any leftovers.
- Pour the soup or gravy and mix with wine over the turkey and vegetables.
- Sprinkle with granulated garlic, salt, pepper.
- Top with second crust.
- Dot with butter.
- Crimp edges of dough using fork tines.
- Bake at 400-degree hot oven until crust is golden brown around 35 to 40 minutes.
Notes:
Other options: use leftover boneless beef, roasted boneless chicken, or even shrimp) mushrooms, cooked broccoli, green cut beans, use chicken, turkey, or beef gravy depending on what kind of meat you use. I use Alfredo sauce for the shrimp.
