I always loved zucchini quiche but this Crustless Zucchini Quiche tastes absolutely amazing plus made in muffin tins recipe the perfect on the go breakfast!
Lucky for me I get zucchini fresh all year long in Florida but I also freeze it shredded you may have seen my tips on freezing zucchini?
When it's lower in price I just buy them up, shred or cube and freeze, it's so easy and then I have it all year long ready to use.
I am a big fan of crustless quiche and zucchini quiche, especially in summer when we want to eat lighter.
So today I tried to make them in a muffin tray using some shredded zucchini.

One of my favorite vegetables during the summer is zucchini.
Quiche is a light delicious brunch or even dinner for me. I am more of a vegetable than a meat eater.
Actually, I hardly ever eat meat. Why? Well for starters everyone has had bypass surgery sibling wise in my family.
Mom and dad passed from heart problems, my Aunt had a bypass, brothers both had a bypass.
Now I maintain my carb intake, eat more vegetables and fruits and avoid anything that has high cholesterol.
I didn't eliminate everything, just in moderation, we don't eat pasta three times a week anymore.
We didn't watch carbs growing up
It really is very difficult to eat healthy when you grow up eating delicious pasta in an all Italian family.
We always had fabulous Italian rich pastries and lots of carbs.
I try to maintain a consistent weight and have it checked every year.
I also have high blood pressure which is all hereditary and eat low sodium.
Eating healthy is a way of life
In most of my recipes, I will substitute lower fat but check the sugar content, it doesn't mean it lower fat if it sugar laced!
The sugar is a carb that turns into fat! If you prefer a crust, I have also provided the recipe below. This one is crustless.
The little cupcakes are packed with delicious cheese and garlic flavor.

Low Carb Zucchini Cupcake Quiche

These are a low fat and low carb mini cupcake quiche. Perfect for weight watchers and healthy alternative for appetizers or breakfast
ingredients:
- 2 egg whites beaten
- 2 cups sliced or shredded zucchini blotted dry with paper towels
- 12 grape tomatoes sliced for the tops
- 1 cup low moisture shredded mozzarella
- 1/2 cup Parmesan cheese extra for topping
- 1 1/2 teaspoons granulated garlic or fresh minced garlic
- olive oil
- 1 cup 1% milk
- 3 or 4 fresh basil leaves chopped
- salt, pepper, and cayenne to taste
- Optional additions or substitutions: sliced mushroom, sliced eggplant, sliced onions, chopped broccoli, chopped raw spinach, broccoli rabe or cauliflower can be used instead or mixed to 2 cups of vegetable medley

How to cook Low Carb Zucchini Cupcake Quiche
- Mix everything in a bowl except tomato.
- Pour into an oil sprayed cupcake tins
- You can add store-bought pie crust if you like but that is not preferred in low carb
- Place tomato on top of each of the poured mixture.
- Bake at 350 degrees for 35 minutes or until middles are set.

I am particularly admiring those beautiful red tomatoes on top of the quiches. Making me wish tomato season was here! Looks like a delicious breakfast!
