Greek Summer Pasta

Wednesday, June 8, 2016
Greek Pasta Salad is always the most asked for picnic item on the menu all summer long.

A light lemon dressing, garden farmers market fresh vegetables, kalamata olives, fresh mint, and that favorite pasta you adore make up this easy-to-make summer salad.

You can even add some grilled chicken or sliced lamb on top for a whole meal and a perfect weekend meal.

We love pasta of all kinds but to keep that waistline summer body, we prefer to use a low carb, wheat, or gluten-free pasta and make a healthier version.

The salad dressing on this pasta is super easy to make and has an authentic Greek flavor.

Summer Salad

Summer salads are the best, they can be served warm or cold and still taste great.

I prefer to serve ours at room temperature and always bring the feta cheese to a barbecue outdoor picnic on ice and add it last for safety concerns.

The lighter pasta salads like this one stay great for hours and anything you may be grilling can be added on top and this will make a whole meal instead of just a side />

The best thing about this Greek summer pasta salad is you can feed a large crowd with this and it's so easy and quick to make.
