I don't know about you but just the title of this recipe made me want to make it! I have seen lots of cheeseburger soups but the bacon double got me going! I have to admit that the garlic bread dipped in this soup was what really make it awesome!
Rich creamy and everything you love in a burger except lettuce, tomato and the bun of course you can even add chopped tomatoes in this delicious with some buttery garlic bread. We love this cheesy comforting soup just the way it is! The bacon really compliments the soup's flavor and the thickness is great for dipping the bread into it's very hearty.
I think all that melted cheese makes this more like a dip than a soup either way its awesome!
Bacon Double Cheeseburger Soup Recipe
6 Strips of bacon cooked crispy crumbled
4 small potatoes cooked and smashed ( I do mine in the microwave, them remove skins)
1 pound ground sirloin
1 teaspoon Worcestershire sauce
1/2 cup carrots
1 celery stalk
3 cups milk
2 tablespoons flour
3 tablespoons butter
1/2 cup white wine or chicken broth
1 teaspoon granulated garlic
salt, pepper to taste
3 cups shredded sharp cheddar or mixed Cheddar's and more for the top to garnish
dash of cayenne pepper optional
In a food processor place carrots and celery pulse until fine, set aside
In a medium sized saucepan, place the butter in the pan and melt it. Add the ground beef, Worcestershire sauce, saute until all the pink is gone, drain some of the fat. Stir the flour into the rest of the fat and saute until well combined. Pour the milk in slowly stirring and simmer until it begins to thicken around 10 minutes, then add the wine or chicken broth Add all the vegetables, garlic, salt, pepper to taste. Simmer around 12 minutes on low or longer letting the soup thicken.
Stir in the cheese. Simmer until melted and blended and thickens to your likeness. I simmer this until the consistency is thick and creamy. You can always add more broth or water if it gets too thick.
Fold in the crumbled bacon and serve with more shredded cheddar on top.
