This is just a basic recipe. You can make everything from scratch or used canned for a quicker soup. Everything else that makes this a hearty soup is the garnishes.
I know one son love sour cream the other can take it or leave it.
That's why I prefer to add the topping station to my tables. Everything from shredded cheese to chopped tomatoes, avocado, sliced olives and more is on it.
Get Your Favorite Toppings Out!
I think I like the topping as much as the soup base.
Toppings with olives, peppers, sour cream, maybe some hot sauce, avocado with a squirt of lime juice and loaded with shredded pepper jack cheese is my favorite.
Everyone likes something different.
I like to set up a topping station with all those things in little containers so it build your own soup station.
I do that with salads too.
Then a Thought came to mind
I like everyone to be happy so I put it out and you make it they way you like it.
Of course this soup wouldn't be a great taco soup without the crumbled tortilla chips.
I started out by getting the hamburger meat from the freezer to thaw and the thought came to mind.
Big Fans Of Chicken Soup?
I thought we all love chicken soup,. and chicken would be great in this taco soupm instead of the traditional hamburger meat.
My favorite taco is piled high with chicken and cheese, so the soup would be awesome.
Love it with some beans, sour cream and jalapeno pepper's.
This easy chicken taco soup is my favorite way to make it now. I use to only make it with hamburger meat.
Pure Comfort Food
I can eat this soup all year round.
I love the fact that it's so easy and quick to prepare.
If your in a hurry, you can dump everything in a slow cooker and set it on low.
When you come home its all set to eat, just saute the chicken or hamburger first.
We like a little heat in our soup!
I prefer getting the chilies mixed in diced tomatoes all in one can.
I like them mild but you can buy them separate if you like the hotter chilies or more chilies in the soup.
The green chilies give this a bold flavor Mexican flair. I really love that ingredient.
Also any of the the spices you add are to taste, if you don't like hot foods, just omit the cayenne and chilies.
This is the basic recipe
If you want more cayenne, garlic, cumin or chili powder, add it.
I always dump more to taste by how my taste buds are for that day.
Sometimes I think something is salty one day and the next day it's the same amount and not enough. That's the exact reason I write "season to taste".
This easy chicken taco soup has just the right amount of flavors with all the additions and toppings when served, so add as much as you like!
Remember, leftovers are great toppings for baked potatoes, over pasta or rice and even on top of salads!

Easy Taco Soup
prep time: 15 MINScook time: 12 MINStotal time: 27 mins
ingredients:
In a large deep saucepan (or you can make this in a slow cooker after you saute chicken) add:
4 cubed chicken breasts you can also use cooked store-bought chicken (or use 1 1/2 pounds ground chicken, turkey, or hamburger sauteed)
2 tablespoon olive oil or canola
Saute chicken with oil on medium-high heat for 2 minutes on both sides stirring
Then add the seasonings below to taste, you can use more or less of any of the ingredients below:
2 teaspoons chili powder
1 teaspoon cumin
pinch of cayenne (optional) or as much as you like
1 teaspoon granulated garlic
1 package of taco seasoning or chili seasoning
Note: you can use a package of chili or taco seasoning packets but still salt, pepper and cayenne to taste. Also if you like more of a sauce, use one can of tomato sauce in addition to the diced tomatoes and chilies.
instructions:
Add to the pot:
2 - 12 cans of pink pinto beans rinsed or make freshly cooked pinto beans or (homemade beans cooked )
1 12 - ounce can of kidney beans or black drained
1 28 - ounce can diced tomatoes with green chilies with juices
1 cup or more of frozen or canned corn ( I had freshly shucked off the cob leftover to use up)
Optional: 1 finely chopped bell pepper, 1 small chopped onion, 1 finely chopped stalk of celery
Simmer on low for around 30 minutes or until chicken is very tender.
If soup started to thicken too much add either chicken broth or water to thin it out
Garnish Crumbled tortilla chips, sour cream on top, avocado slices, tortilla chips, shredded cheddar cheese, or any other shredded cheeses you prefer. Sliced black olives, jalapeno peppers, hot sauce or anything else you love in your chili
