Tips for Making Doctored Cake Mix Cookies

  • roll the cookies into balls by hand with very little flour or use a cookie scoop
  • store these in airtight containers
  • use any combination of 1 teaspoon extract with 1/2 cup or assorted nuts and any kinds of dried fruits or chocolate chips
  • tint the dough with food coloring
  • cool completely before frosting
  • cookies should be fragrant with spice you can add more
  • use a lined cookie sheet or Silpat mat
  • cookies can be rolled in granulated sugar before baking instead of frosted or after baking rolled in powdered sugar
  • add some cinnamon in the frosting for more spice flavor

Lemon Coconut Cake Mix Cookies

Lemon cake mix with coconut made into easy delicious cookies and so easy!

Ingredients

  • 1 Lemon Cake Mix, 15.25-ounce box
  • 1/3 cup vegetable oil or melted butter
  • 2 eggs
  • 1 cup shredded coconut
  • see notes for additions below

Instructions

  1. Preheat the oven to 350 degrees and prepare cookie sheets with either parchment paper or lightly grease the pans.
  2. Mix the eggs, oil, or butter with the cake mix.
  3. Add the coconut and mix the batter until it forms a ball.
  4. Use a medium-sized cookie scoop or roll into balls then place on the cookie sheet.
  5. Bake at 350 degrees for 8 to 12 minutes, depending on the size you made.
  6. These should cool completely before topping with frosting.
  7. Lemon frosting recipe:
  8. 2 cups powdered sugar
  9. 1/2 teaspoon lemon extract,
  10. add water to make a thick but free-flowing icing.
  11. Mix all together, frost cookies sprinkle with coconut.
  12. Alternate topping: dust with powdered sugar.
