Here is a one-minute microwave delicious applesauce shortcake.


This is the perfect dessert for a busy cook and with just a few ingredients on the table for an easy treat.


No matter how full I am, there’s always room to squeeze dessert in.


However, while I absolutely love digging into the fruity goodness of a warm apple dessert like this one.


Now even though I spend almost every day in the kitchen, I tend to keep my personal baking pursuits on the simple side of things.


Well, sometimes my sweet tooth is calling the shots and demands dessert and this is fast and easy.


This easy applesauce mug cake recipe came about from the desire to prepare dessert for my hungry men when they come home and I am not in the mood to dirty up the kitchen!


It’s not very often I use my microwave for anything other than heating up leftovers.

A fast and easy dessert!



This may be the easiest dessert on the planet! Seriously.


I threw everything in the cup as you can see in the video in 1 minute.


I think washing the strawberries and slicing them took longer.


All kidding aside, this was a really delicious dessert in a hurry.


Bet this would be perfect for kids in a dorm especially when they are away from mom's home cooking. What a great alternative.



I never dreamed that a microwaved cake could taste this good. I thought it would be like a piece of rubber or a sponge.


The texture isn't exactly like a regular cake but it sure works in a pinch!

Perfect quick dessert when that sweet tooth kicks in!



I did have to adjust the sweetness.


As you can see I also have an alternative for diabetic versions using stevia and almond flour for low carb.



Since there are no eggs in this recipe you can taste it and adjust to your liking. You can add more cinnamon also if you like.


My applesauce happened to be with cinnamon in it unsweetened.



Also, you can substitute the applesauce for oil or butter.


I choose to make this with applesauce for the moisture content. Whichever way you make it, the taste is still very good.



Of course in the video, I made the mug cake and added the strawberries and whipped cream while warm.


I would wait till it cools before adding the cream as it melts fast.

The Microwave


The microwave I have cooked right at one minute.


I have an 1100 watt microwave.


You will have to adjust the time if it's higher, I would stop a couple of seconds less.



Obviously more if its less than 1100 watts.

Fruits


You can make any kind of mug shortcake you like.


You can choose any fruit you like, apples, bananas, berries, peaches. Whatever you like!


Garnish with whipped cream

Microwave Applesauce Mug  Shortcake

Microwave Applesauce Mug Shortcake

instructions:

3 tablespoons all-purpose flour or you can use almond flour
1/4 teaspoon baking powder
pinch of salt
1 tablespoon plus 1 teaspoon water
2 1/2  tablespoons applesauce
1/4 teaspoon vanilla
1/8 teaspoon cinnamon
1 -1/2 tablespoons sugar or use stevia to taste
Optional: sliced almonds
Cooking spray
Microwave proof mug
Any fruit IE: Strawberries, blueberries, raspberries 
Whipped cream
 Optional: warmed strawberry jam

Mix the sugar, flour salt, cinnamon, and baking powder.  Stir to combine. Add the applesauce, vanilla, water.  Spray the mug generously with cooking spray.  Pour in the batter. Microwave one minute.  Remove from cup and place on the plate. Garnish with fruit and whipped cream.

Notes: You may have to adjust the sweetness and microwaves time.

 I like my cake a little sweeter than most. Always test the batter since there is no egg in it to adjust the sweetness to your liking. For additional sweetness warm some strawberry jam in the microwave and dip the strawberries in it before topping your dessert with them.

My microwave is 1100 watts and this cooked in 1 minute. Adjust accordingly. I would cook it less in a higher wattage model.

  2. I tested a few chocolate mug cakes, but they weren't nearly as pretty as this! I love apple desserts so love how you made this with applesauce :)
