Made in less than 15 minutes and can be loaded on top with whatever you like on pizza, however, you should try to stick to a low-carb style when making for a low-calorie-weight-watching diet.
They are just like eating a pizza but the zucchini rounds are the crust, no it doesn't totally take the place of that high-carb piece of the real deal but it will help until you reach your goal weight and stop the craving.
Let's face it, dieting is usually a chore and boring, these will satisfy your craving for pizza, you can add meat, leave it plain, or use low-calorie fat-free substitutions.

Sliced Zucchini Pizza Bites
I yo-yo my dieting habits and it is so hard in summer when parties are everywhere, I even like to take these to one so I don't load up on the burgers, fries, and other picnic items that tempt me.
Keep these simple, sometimes I just add Pecorino Romano and no mozzarella, or a slice of provolone on each one you can top these with whatever you like, and if you're not dieting, then make the zucchini everything bites.
Guilt-free foods are usually boring but these pizza bites are delicious and will be inspiring in flavor when you hate dieting.

- cooked leftover finely chopped meats

Mini Pizza Zucchini Bites

A little appetizer with loads of flavor just like pizza using zucchini slices
Ingredients
- zucchini slices cut into 2-inch thick slices (as many as you will need for your party I usually use 2 large sliced or snack)
- 1 can of pizza tomato sauce
- 2 cups of shredded mozzarella cheese or provolone
- 1 container rated Cheese Pecorino Romano or Parmesan
- salt, pepper
- freshly chopped oregano, basil, parsley, or use dried
- Cooking spray oil or olive oil
- parchment paper and a baking sheet
Instructions
- Preheat the oven to 400 degrees.
- Place parchment paper on a cookie sheet and spray it with cooking oil.
- Wash and slice the zucchini into thick 2 to 3-inch slices and blot dry ( I like to peel the skin off randomly and leave some green on the disc-sized rounds).
- Place the cut zucchini sliced on the baking sheet.
- Spoon pizza sauce using a tablespoon evenly on top of each slice of zucchini (depending on the size of them use more or less sauce).
- Add any kinds of optional topping suggestions in the notes below on top.
- Sprinkle with grated cheese and all seasonings evenly over the tops of each one.
- Top each one with shredded cheese.
- Spray the tops with more cooking oil spray.
- Bake at 400 degrees until the cheese browns around 10 to 15 minutes.
- These can also be put in the air fryer single not stacked at 400 degrees for 5 minutes.
