If you love easy recipes, this baking mix Crustless Zucchini Quiche will be your favorite new edition to your recipe collection.


This quiche has no crust, and it's super simple to make all in one bowl it's hardly any fuss at all.


Seriously everyone just gets mixed together, poured in a pie plate, baked, and can be adapted easily to being all vegetarian or meat lovers quiche!


A few ingredients can change this quiche every time you make it.


We have a few favorite combinations with the addition of zucchini like adding pepperoni with lots of shredded provolone.


Get creative and make up your own quiche your family loves and it can be any quick meal even during weeknights when you're the busiest!

Step By Step Instructions

  1. preheat the oven to 350 degrees and oil spray a baking pie plate deep dish style
  2. grate the zucchini and blot it dry and set it aside
  3. In a  clean bowl, mix together all the remaining ingredients(except zucchini) until just blended
  4.  fold in the zucchini
  5. pour into the pie plate
  6.  bake for around 45 minutes or until the middle is set

Ingredients You Will Need

  • chopped zucchini blotted dry
  • shredded cheese ( Dublin or extra sharp cheddar, provolone mozzarella, swiss whatever you like)
  • grated parmesan cheese
  • Bisquick
  • eggs, slightly beaten
  • salt
  • pepper
  • granulated garlic powder
  • oil

Additional Suggestions:


  • Meat lovers: 1/2 cup of any one of these cooked and boneless meats: chicken, steak, ham, pepperoni, hot capicola or crumbled bacon
  • Other Vegetable Additions: mixed or substitutions for zucchini: chopped artichoke hearts, mushrooms, chopped asparagus, chopped or diced eggplant,(diced red or green bell peppers, diced tomatoes are both perfect additions for the festive look during the Christmas holiday especially on Christmas Eve!!

Easy 1, 2, 3 steps


  1. Preheat oven to 350 degrees
  2. Oil spray a 9-inch pie plate
  3. Hand mix all ingredients until combined evenly
  4. Bake in a greased pan or for 35 to 40 minutes.
  5. Cool for 15 minutes before slicing.




Tips and Tricks for Baking Mix Quiche


  • You can add in whatever you like to this Bisquick recipe.
  • Use a low carb baking mix for diabetic versions
  • Original quiche has ham or bacon with Swiss cheese in it
  • Make this an easy vegetarian recipe with my all veggie suggestions
  • Make sure that you let it cool down for at least 10 minutes before slicing
  • You can double this recipe and bake it in a 9×13 pan, or a brownie sized pan and slice into squares for appetizers at parties it will take less time to cook just check it at 25 minutes.
  • This is a perfect potluck and picnic food
  • These are awesome in cupcake tins and freeze well for individual servings

This is a zucchini quiche made with eggs, cheese and baking mix all together with no crust. The baking mix makes this magically form a perfect quiche that is so easy and you can mix and match any vegetables or meats in it. A great appetizer made in a sheet pan for parties.

Ingredients:

  • 3 cups chopped zucchini blotted dry
  • 1 1/4   cups shredded provolone cheese ( Dublin or extra sharp cheddar, provolone mozzarella, swiss, use whatever you like)
  • 2 tablespoons grated parmesan cheese
  • 1 cup Bisquick or Low Carb Baking Mix
  • 4 eggs, slightly beaten
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon granulated garlic powder
  • 1/2 cup oil
  • Optional for Meat Lovers: 1/2 cup of any one of these cooked and boneless meats: chicken, steak, ham, pepperoni,  hot capicola, or crumbled bacon
  • Other Vegetable suggestions mixed or substitutions for zucchini: chopped artichoke hearts, mushrooms,  chopped asparagus, chopped or diced eggplant, diced peppers, diced tomatoes,

Instructions:

  1. Preheat the oven to 350 degrees
  2. Oil spray a 9 or 10-inch deep-dish pie plate or casserole dish
  3. Note: these can be made in squares also in a brownie pan as an appetizer for parties.
  4. Grate the zucchini with a hand grater or pulse until small bits in a food processor.
  5. Blot dry with paper towels any excess moisture.
  6. Place the zucchini and all ingredients adding the baking mix last to a medium-sized bowl.
  7. Stir until combined, you do not have to beat this.
  8. Spread into the prepared pan ( baking sheet pan, pie plate or cupcake tins) and bake at 350 degrees until the top is browned and the middle is stable done, around 35 minutes depending on thickness.
  9. Let rest 10 minutes before slicing.
