Easy Step-by-Step Doctored Cake Mix Coffee Cake

  1. Preheat oven to 350 degrees. This makes either 16 cupcakes, 2- 8-inch cakes, or 1 - 13 x 9 pan or makes 12 cupcakes and 1 - 8-inch cakes
  2. Prepare the cupcake tins or the pans you are using with paper liners and/or grease the pans that you are using
  3. Make the batter using the doctored additional ingredients
  4. Sprinkle the topping on
  5. Bake at 350 degrees depending on pans or tins using time will varying

Tips

  1. always preheat the oven
  2. make cupcakes or two 9-inch small cakes or a 13 x 9 sheet cake
  3. cupcakes will sink a little in the middle with the weight of the topping, it's better to add a layer of the batter.  A little batter, topping, and  ending with batter on top for cupcakes
  4. line the pan with parchment paper or heavily spray pans with cooking oil spray
  5. nuts are a great addition to the streusel or pumpkin seeds for food allergies
  6. do not overbake this cake and use the toothpick method

The doctored cake mix is loaded with cinnamon and sugar topping. This cake is very moist and light because of the added sour cream to the mix.

Ingredients

  • 1 (15.25-ounce) package of yellow cake mix
  • 1 cup sour cream
  • 1 cup of water
  • 3 large eggs
  • Optional Topping or Filling
  • 1 cup coarsely chopped walnuts or pecans (use pumpkin seeds if you have nut allergies)
  • 1 3/4 cup flour
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 8 tablespoons softened butter
  • 2 teaspoons ground cinnamon
  • For Other Optional Topping Additions: 1 cup chopped fruits of choice, blueberries, apples, peaches, cherries, raspberries, proceed the same by topping each cupcake with fruits then sprinkling with cinnamon, nuts, and sugar mixture.

Instructions

  1. Preheat oven to 350 degrees.
  2. This makes either 16 cupcakes, 2- 8-inch cakes, or 1 - 13 x 9 pan or makes 12 cupcakes and 1 - 8-inch cakes.
  3. Prepare the cupcake tins or the pans you are using with paper liners and/or grease the pans that you are using.
  4. For the Topping:
  5. In a medium bowl, combine nuts or seeds if using, flour, sugars, cinnamon and butter mix well and set aside.
  6. For the Batter:
  7. In a large bowl using an electric mixer, beat the cake mix with sour cream, water, and eggs for 3 minutes.
  8. The batter will be very thick.
  9. Pour into the prepared pans
  10. Note: If making cupcakes, line your cupcake tin paper liners 2/3 full ( I use a medium-sized ice cream scoop to spoon into the paper liners).
  11. Sprinkle on the topping to the top of the cake with the crumb mixture or on each cupcake with the optional cinnamon and nut topping mix or any of the fruit suggestions.
  12. The cake or cupcakes can be put in the freezer for up to 3 months.
  13. Bake a large 13 x 9 sheet cake for 30 to 35 minutes at 350 degrees for 15 to 20 minutes for cupcakes and 20- 25 minutes for two small cake pans around 8 inches.
  14. Note: Best to use the toothpick method in the center to make sure it comes out clean these are completed with cooking,
