Eggnog Cookies Made from Scratch

Eggnog just shouts holiday with its spicy delicious aroma and is the perfect ingredient for a festive addition to these yummy Eggnog cookies.

These are all made from simple pantry ingredients eggnog cookies are a wonderful blend of fall flavors using cinnamon, and nutmeg blended in this cookie batter.

This festive cookie can be dusted with powdered sugar, sprinkled with festive sanding sugar before baking, or frosted with a hint of eggnog cream cheese flavored icing on top.

Eggnog Cookies

  1. whisk the flour, spices salt, and baking powder together
  2. in another bowl cream the sugar and butter together then add the egg yolks, eggnog and vanilla
  3. fold the two mixtures together until blended and do not overmix this batter
  4. if using mix-ins see below suggestions, fold them in this step
  5. bake at 300 degrees for around 20 to 25 minutes

Tips and Suggestions

  1. add rum flavoring extract for an eggnog rum cookie
  2. dust with powdered sugar
  3. add sanding sugar in red or green before baking
  4. add chocolate chips to the batter 
  5. fold in some raisins or other dried fruits
  6. add holiday funfetti to the white side of the dough
  7. add red and green glazed cherries for a festive cookie batter
  8. cookies can be frozen for up to 3 months but freeze unfrosted
  9. keep cookies in an airtight container
  10. I always place them in cupcake liners or see-through ziplock cookie bags when sitting next to each other

Eggnog Cookies

Eggnog-infused flavors in a delicious all-made from scratch for the holiday cookie tray.

Ingredients

  • Eggnog Cookie Batter:
  • 1 cup sugar
  • 3/4 cup butter at room temperature
  • 1/2 cup eggnog (not low fat)
  • 1 `1/2 teaspoons pure vanilla extract or rum extract
  • 2 egg yolks
  • 1 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 2 1/4 cups of AP flour
  • 1 teaspoon baking powder
  • a pinch of salt
  • Optional garnish: a sprinkling of nutmeg before baking
  • Before baking Mix-ins: 1 cup of chocolate chips can be added to this recipe, or 1/2 cup of coconut. funfetti or nuts you prefer.
  • After baking and cooling, these can be frosted, dusted with powdered sugar, or left plain.
  • Cream Cheese Icing: 2 cups powdered sugar 1 8-ounce package of cream cheese softened 4 tablespoons marshmallow fluff

Instructions

  1. Preheat the oven to 300 degrees and prepare two cookie sheets lined with parchment paper.
  2. In a clean bowl, cream the butter and sugar together. Beat in the egg yolks to the creamed mixture then add the eggnog and vanilla. Do not over-mix
  3. Mix the flour, salt. spices, and baking powder in a bowl whisking together.
  4. Optional: Sprinkle a dash of nutmeg on each cookie.
  5. Drop by teaspoons full or use an ice cream scoop on a greased baking sheet.
  6. Bake at 300 degrees for 20 to 25 minutes, just until the edges start to brown.
  7. Cool slightly before removing from the baking sheet.
  8. Note: if using a greased baking sheet, do not cool too long or they will stick to the pan.
  9. Place on wax paper or a wire rack to cool completely.
  10. Garnishing: These can be sprinkled with colorful sanding sugars in green and red before baking for the holiday. After cooled dusted with powdered sugar or frosted.
  11. Cream Cheese Frosting Instructions:
  12. Whip the cream cheese until smooth then slowly add the other ingredients until well combined.
  13. Frost the tops of the cookies with prepared icing when completely cooled and top with festive colorful candy sprinkles.
