Tomato Jam Topping

This is a versatile tomato jam for toasted breads, toppings for meats and seafood and so much more.

Ingredients

  • 2 pounds of Roma (plum tomatoes)
  • 3/4 cup of light brown sugar
  • 1/4 cup lemon juice freshly squeezed
  • 1 1/2 teaspoon salt
  • pepper to taste
  • 1/2 teaspoon red pepper flakes or more to taste
  • 2 teaspoons minced fresh garlic
  • 1/2 teaspoon granulated garlic powder
  • 1/2 teaspoon ground cumin
  • Optional: 1 tablespoon finely chopped long hot peppers, chilies or jalapeno peppers

Instructions

  1. Tomato Jam Topping Recipe:
  2. Place the tomatoes in a food processor and pulse until desired chunkiness.
  3. To remove seeds you will need to put the tomatoes through a food mill, otherwise, just continue to the recipe below.
  4. In a deep heavy-duty saucepan, add all the ingredients on low heat.
  5. Simmer until the tomatoes thicken, this takes around 1 hour and stir the contents every 15 minutes to ensure nothing is sticking to the bottom.
  6. Simmering can take up to 1 hour or longer.
  7. When the tomatoes are done they should look glossy, coat the spoon and not a lot of liquid left, turn off the heat, and cool.
  8. Add to mason jars stored in the refrigerator for up to 2 months or stored in the freezer-safe container2 for up to 3 months.
  9. Note: this makes 2 cups of tomato jam.
  10. Alternative: Roasted Tomato Jam: roast sliced plum tomatoes for 25 minutes in a preheated oven of 400 degrees on a parchment paper-lined baking sheet. Proceed to simmer for less time until thickened with all ingredients.
